The Best Time to Plant Garlic: Fall Timing by Region

For most temperate gardens, plant garlic in fall before the ground freezes. Local freeze timing, climate and extension guidance determine the right window.

For most temperate gardens, plant garlic in fall, early enough for roots to establish before the ground freezes. The right date depends on your local climate—not a single nationwide calendar date. Check your local extension service for a planting window that fits your area.

How to time fall planting

Use the expected ground freeze as your guide. Penn State Extension recommends planting about three weeks before the ground freezes, giving roots time to develop without encouraging excessive top growth before winter. That is a relative timing rule, not a date to apply everywhere. Penn State Extension

Regional recommendations can use different cues. University of Illinois Extension gives a local rule of one to two weeks after the first killing frost. Because that differs from Penn State’s advice, use the recommendation from an extension service familiar with your local conditions rather than combining the two into a universal formula. For California more broadly, a 2025 University of California Agriculture and Natural Resources article describes fall as the best time for a summer harvest and discusses garlic types and varieties suited to its climate, but it does not establish one date for every part of the state. Can you plant garlic in spring?

Yes, in some regions. Spring planting is an alternative when fall planting was missed, but plant as early as local guidance allows. Iowa State’s schedule is late March to early April, as soon as the ground can be worked; it cautions that planting later in spring leads to smaller bulbs. Why chilling may matter

Garlic needs cold exposure for optimum shoot and bulb development. For its spring-planting advice, Illinois Extension’s factsheet recommends refrigerating cloves for about eight weeks before planting in early spring. Treat that as Illinois Extension’s guidance, not an automatically applicable requirement for every climate or garlic variety. University of Illinois Extension factsheet

Choose planting stock suited to your area

Use clean, sound cloves sold for planting, from a reputable dealer or local grower. Penn State and Iowa State caution that grocery-store garlic may be unsuitable for local conditions; Penn State also notes it may have been treated for storage. Garden centers and mail-order companies are among the sources Iowa State identifies for planting garlic. Check that the cultivar is appropriate for your region. Planting depth varies by local guidance

Extension recommendations differ: Penn State says to plant at least two inches below the surface, Illinois Extension says about two to three inches, and Iowa State says about one inch. Follow the depth recommended by your local extension service or planting-stock supplier rather than treating one of these regional instructions as universal.
