Choose capacity for the batch you actually make: a compact chopper can handle a small condiment batch, while a full-size processor makes more sense if you also want it for broader food preparation. The sources below show workable appliance configurations, not a controlled test naming one universal winner.
What matters most in a mayonnaise processor?
Gradual oil addition is central to the manufacturer recipes cited here. The appliance needs a way to introduce oil slowly while its blade or whisk is operating; its capacity by itself does not establish whether it is a good fit.
- Oil delivery: Look for a feed tube, drizzle hole, or drizzle basin that lets you add oil steadily without stopping the machine.
- Included attachment: Manufacturer recipes use a chopping blade or a whisk. Some larger machines may also include a creaming disk, but the cited source does not establish that it will outperform other attachments.
- Batch size and bowl shape: Match the bowl to the amount you plan to make. A wide bowl may be less suitable for a small quantity; one publication reported better mayonnaise results with the Russell Hobbs Desire when making larger quantities.
- Other kitchen tasks: A full-size processor can be easier to justify if you want it for larger or varied food preparation. A small chopper takes less room and may suit an occasional, modest batch.
- Practical ownership: Check the exact model sold in your region, included accessories, cleaning requirements, storage space, and local availability before buying.
Food processors and choppers to consider
These examples are tied to manufacturer recipes or published product coverage. They are options to compare by configuration and use case, not a mayonnaise-only ranking.
| Option | Mayonnaise-relevant details | Who it may suit |
|---|---|---|
| Cuisinart full-size processors | Cuisinart’s recipe uses a chopping blade and adds oil through the feed tube. | Magimix 4200XL | Ideal Home lists a 3-litre bowl, three bowls, a whisk, and 950 watts in its 2026 coverage. That listing emphasizes versatility; it is not a mayonnaise-specific test. Ideal Home’s food processor guide. | Someone prioritizing a broader-use processor and multiple bowl sizes rather than a mayonnaise-specific recommendation. |
| Russell Hobbs Desire Food Processor | Ideal Home says its reviewer was impressed by the creaming disk for mayonnaise, but found it worked better with large quantities because the bowl has a wide base. This is that publication’s reported test, not a guarantee for every recipe or batch. Ideal Home’s food processor guide. | A cook who usually makes larger batches and values the creaming-disk configuration. |
| Cuisinart FlexPrep 1.1L | TechRadar lists a 1.1-litre bowl, chopping blade, and whipping disc. Its 2026 guide says a mini processor of up to 5 cups / 1.19 litres can suffice for mayonnaise alongside one or two meals; that is editorial guidance, not a comparative study or proof this model is best in class. TechRadar’s mini food processor guide. | Someone seeking a compact processor for small amounts of mayonnaise and other modest prep jobs. |
Can you make mayonnaise in a mini food processor?
Yes, a compact chopper is a credible choice for a smaller batch. KitchenAid’s own recipe makes mayonnaise in its 5 Cup Food Chopper using a whisk accessory and drizzle basin. TechRadar’s 2026 guidance says a mini processor of up to 5 cups / 1.19 litres may suffice for mayonnaise accompanying one or two meals. That guidance is a practical editorial recommendation, not a test of every mini processor.
#1 Best Overall
- Built-in bowl scraper saves time. Quickly process ingredients without stopping to use a spatula. Simply move the scraper from side-to-side to scrape the bowl while the food processor is running or the power is off — no need to remove the lid.
- Slice, shred, chop, mix and puree with 2 versatile attachments. The Hamilton Beach food processor gives you 5 processing functions and includes a stainless steel slicing/shredding disc and chopping/pureeing blade so you can tackle every job with ease.
- Powerful 450 watt motor. Make healthy salads, homemade salsa, hearty acai bowls and more. The 450 watt motor easily powers through the toughest ingredients, so you can spend less time processing and more time enjoying.
- Precise control with 2 speeds plus pulse. The low and high speeds plus pulse give you the control you need for a variety of recipes. Use the high speed when you need more power and select the low speed for processing or mixing delicate foods.
- 10 cup bowl capacity. The generous 10 cup bowl fits large volumes of food all at once, and the large feed chute saves you time by reducing the need to pre-cut food before processing or using as a vegetable chopper.
Check the specific machine’s bowl shape and oil-delivery setup before buying. A wide bowl can make smaller quantities less suitable, as Ideal Home reported for the Russell Hobbs Desire when discussing its creaming disk. For a small batch, a compact model with a suitable accessory and controlled oil addition is a better basis for choosing than capacity alone.
Does a food processor need a drizzle hole?
No specific design is essential, but you do need a workable way to add oil gradually while processing. Cuisinart’s methods use either the feed tube or a drizzle hole in the pusher; KitchenAid’s chopper recipe uses a drizzle basin while pulsing. If a model has none of these, check its manual for a safe, practical way to add oil without interrupting the method. The cited recipes do not establish that one feed design produces better mayonnaise than another.

What the manufacturer recipes show about technique
Cuisinart’s food-processor method
Cuisinart’s recipe starts with four egg yolks, salt, Dijon mustard, lemon juice, water, and ¾ cup oil. It processes the base until smooth, then takes about one minute to add the first ¼ cup of oil in a very slow stream through the feed tube. The remaining oil is added more slowly until the mayonnaise thickens. The stated yield is 1¼ cups. These quantities and timings belong to this recipe; they are not universal requirements for every processor.
KitchenAid’s chopper method
KitchenAid’s recipe uses a whole room-temperature egg with oil, sugar, vinegar, Dijon, and salt. It processes the base for 20 seconds, then adds oil through the drizzle basin while pulsing for three minutes. The stated yield is six servings. Its ingredient ratios and timing are specific to that recipe and should not be combined with Cuisinart’s method.

Raw egg safety and storage
Cuisinart warns that mayonnaise made with raw or lightly cooked eggs carries a slight risk of salmonella or other foodborne illness. It recommends fresh, properly refrigerated, clean Grade A or AA eggs with intact shells, and avoiding contact between the egg contents and the shell. The page also says an egg substitute may be used. Follow the food-safety guidance that applies where you live, especially when serving people at higher risk from foodborne illness.
KitchenAid says to store the mayonnaise made from its recipe in an airtight container in the refrigerator for five days. That period is specific to KitchenAid’s recipe; it should not be treated as a universal storage guarantee for other recipes.

How to choose for your kitchen
- Decide your usual batch size. For an occasional small amount, consider a compact chopper such as the 5 Cup model in KitchenAid’s recipe. If you regularly prepare larger quantities, compare full-size machines and bowl geometry.
- Confirm the oil-addition method. Check for a feed tube, drizzle hole, or basin that can be used while processing or pulsing.
- Check the included attachment. Verify whether the exact model includes the blade, whisk, or other tool used in the method you plan to follow; accessories can vary by model or region.
- Weigh mayonnaise against your other uses. If you also want to prepare larger quantities or a range of foods, a general-purpose full-size processor may make more sense than buying a chopper just for condiments.
- Verify the exact local product. Confirm model name, accessories, capacity labeling, and availability from the seller or manufacturer in your region; the examples above do not establish current local stock or price.
Because the sources do not compare these appliances under the same mayonnaise recipe and conditions, there is no evidence-based single winner. The strongest fit is the model whose oil-delivery setup, attachment, and bowl suit your normal batch and the other jobs you expect it to handle.
