Choose vanilla rose, chocolate lavender, chamomile honey or jasmine-matcha for creamy ice cream; choose hibiscus-tulsi for a water-based sorbet that can also be made as granita without an ice cream maker. The recipes below come from named publishers, and their quantities and techniques are recipe-specific—not interchangeable formulas.
Choose a recipe by its base and flavor

The Mountain Rose Herbs recipes give an approximately one-quart yield; use each linked recipe for its exact ingredient amounts. The hibiscus-tulsi card is a different, water-based formula, so do not substitute its proportions for a dairy recipe.
What makes each recipe distinct?
Vanilla rose
Rose buds or petals steep in a dairy mixture with vanilla, while rose water adds another rose element. Mountain Rose Herbs directs cooks to warm the ingredients just to the beginning of a simmer, strain out the petals, refrigerate the base overnight, then churn and harden it. Follow the linked recipe for the specific amount of each ingredient.
Chocolate lavender
Cacao and lavender make this the chocolate option, with vanilla in the background. Mountain Rose Herbs warms the dairy mixture without boiling it, then strains the lavender and chills the base overnight before churning. Lavender can become overpowering if increased: Tastebotanical explicitly warns against raising the quantity in its own recipe. Chamomile honey
Chamomile infuses the cream, and honey supplies the sweetener. The Mountain Rose Herbs method is a brief warm infusion followed by straining and overnight chilling, then churning and hardening. Keep the ingredient amounts tied to its recipe rather than swapping in another base’s ratios.
Hibiscus-tulsi sorbet or granita
Rachel Jepson Wolf’s LearningHerbs card uses an infusion of dried hibiscus and tulsi, also known as holy basil, with honey and lemon juice. After a one-hour steep, strain and chill the liquid before churning. For a machine-free version, the card directs you to pour the chilled infusion into a shallow container in the freezer and stir or scrape it every 30 to 40 minutes until frozen, approximately four hours. That result is granita, not churned sorbet.

Jasmine-matcha green tea
This recipe brings together jasmine green tea and matcha in a dairy base. Mountain Rose Herbs steeps and strains the tea, then adds matcha and vanilla; the mixture is chilled overnight before churning and hardening. It is a tea-forward alternative to the recipes built around flower petals.
Plan for infusion, chilling and churning
Several recipes share a broad sequence, but their precise instructions differ. Some warm botanicals with the dairy; others add them after heating. Follow the individual recipe for ingredient order, infusion length and chilling time.

- Infuse: Warm the dairy gently when the recipe calls for it, or steep the ingredients in water as directed for the sorbet. Avoid boiling when the recipe specifies a gentle heat.
- Strain: Remove flowers or tea leaves with a fine-mesh strainer where the recipe calls for it.
- Chill thoroughly: The Mountain Rose Herbs dairy bases are refrigerated overnight. The LearningHerbs sorbet infusion is chilled before churning; its card also gives chilling directions for its other recipes.
- Churn or scrape: Use an ice cream maker according to the recipe and the machine’s instructions. For the hibiscus-tulsi granita, freeze in a shallow container and stir or scrape every 30 to 40 minutes, for approximately four hours total.
- Harden churned ice cream: Transfer it to a freezer-safe container and freeze as directed by the recipe.
The recipes do not establish one universal steeping time, flower-to-dairy ratio or freezer schedule. A machine is used in several of them, but granita is a documented machine-free route for the hibiscus-tulsi infusion. Tastebotanical also describes a freezer-and-whisk alternative for its own lavender base; follow that page if using its recipe rather than assuming the approach transfers to every formula.
Source culinary flowers and herbs carefully
- Choose dried flowers and botanicals identified or sold for culinary use, rather than using ornamental flowers or plants of unknown treatment.
- For fresh lavender, Tastebotanical advises using flowers known not to have been sprayed with chemicals. It also says its recipe needs less dried culinary lavender than fresh lavender; treat that direction as specific to its recipe, not a general conversion.
- Rose petals, lavender, chamomile, hibiscus, tulsi and jasmine green tea appear in the cited recipes. The ingredients and methods are recipe-publisher guidance, not a broad food-safety guarantee.
Other botanical directions
Elderflower is another summer ice cream flavor: Tastebotanical’s page points to an elderflower ice cream made with elderflower cordial. That source confirms the flavor direction, but the detailed formula is not included here, so no quantities or method are specified.

For a more elaborate plated dessert, Great British Chefs features Harriet Mansell’s combination of rose ice cream, lavender sorbet and chamomile panna cotta. The page gives 60 minutes plus two days for infusing, freezing and setting, and lists an ice cream maker as equipment. It is a composed dessert rather than a quick single-flavor recipe.
