For most Samsung refrigerators sold in the U.S., set the refrigerator to 38°F and the freezer to -2°F. These are appliance setpoints, not the food-safety limits: Samsung says refrigerated food should stay below 40°F and frozen food below 0°F. Check your model’s manual, since recommendations and controls can vary.
Recommended Samsung refrigerator and freezer temperatures
Samsung’s U.S. guidance recommends 38°F for the refrigerator and -2°F for the freezer on most models. The setpoint is the temperature the appliance is aiming for; it does not guarantee every spot inside is exactly that temperature. Samsung attributes these food-storage thresholds to USDA: refrigerated food should be kept below 40°F, and frozen food below 0°F. The thresholds and the recommended settings are related but not interchangeable: the recommended settings give the appliance room to maintain food safely despite normal fluctuations.
Regional guidance differs
For models sold in Canada, Samsung recommends 3°C (38°F) for the refrigerator and -19°C (-2°F) for the freezer. Its Canadian guidance says to keep the refrigerator below 4°C (40°F) and the freezer at or below -18°C (0°F), citing Health Canada. How to check the actual temperature inside
A control-panel reading is not a substitute for measuring the compartment. Use a refrigerator/freezer thermometer and allow time for a stable reading:
- For the refrigerator, place the thermometer in a glass of water near the center of the compartment.
- For the freezer, place it between frozen food packages. Do not put the thermometer in water in the freezer; the glass could shatter.
- Leave the doors closed and wait up to eight hours before reading the thermometer. Frequent openings can affect the result.
If the measured refrigerator temperature is above 40°F or the freezer is above 0°F, lower the setting. Then keep the doors closed as much as possible and wait 28 hours before checking again; the interior can take that long to stabilize after an adjustment. Samsung’s U.S. guidance gives the thermometer placement and timing advice, and its Canadian guide also advises minimizing door openings during stabilization.

How to change the temperature setting
The controls depend on the Samsung model. Identify the model and follow its manual if the panel or settings do not match these common methods. Samsung’s temperature-control instructions describe the following approaches:
Family Hub or app-connected models
On Family Hub models, use SmartThings to adjust the temperature. Some older models use Fridge Manager instead.

Models with Fridge and Freezer buttons
Press the button for the compartment repeatedly to cycle through its available temperatures or bar settings. On some panels, cycling past the lowest setting returns to the highest. For models that use bar displays, Samsung recommends three lit bars for both compartments.
Models with arrow controls
- Use the arrows to navigate to Fridge, Freezer, or FlexZone.
- Press the O button to open the selection.
- Use the arrows to choose the setting, then confirm it.
Compartment conversion controls
Some top-freezer and upright models let you change a compartment’s type or turn it off by holding the appropriate conversion or on/off button for three seconds. Because the feature and button vary by model, consult the manual before using it.

If you want softer ice cream
Freezer temperature for ice cream is partly a matter of preference: a colder setting makes it harder. Samsung says not to set the freezer below 0°F if you want ice cream a little softer. Store it away from the freezer door, where warm air enters, and cover the container opening with plastic wrap before replacing the lid to help prevent freezer burn.
