If you’re wondering, “Did I get ripped off?”, a vague listing is a reason to pause—not proof that a knife is fake. There is no verified blacklist of Japanese knife brands here. Instead, check the exact knife’s country of manufacture, steel grade, maker or town, and seller. A Japanese-style shape, Japanese steel, or a “designed in Japan” label does not establish that the finished knife was made in Japan.
Which Japanese knives should you avoid?
Avoid buying on an unverified promise. If a listing omits key details, treat them as unknown and seek confirmation before paying. Japanese Knife Lab’s 2026 buyer checklist offers this useful shorthand: “A genuine Japanese knife names three things: the country it was made in, the exact steel grade, and the maker or town behind it.” That is the guide’s buyer-checklist framing, not a legal definition or a guarantee of authenticity. Check the finished knife’s stated origin
Look for a clear country-of-manufacture statement for the finished knife. “Japanese-style,” “Japanese steel,” and “designed in Japan” are not equivalent claims. Neither appearance nor steel origin establishes where the knife was made.
Look for a specific steel grade and identifiable maker
A listing that says only “high-carbon steel” or “premium steel” does not identify an exact grade. Look for the maker’s name or town as well. Missing information is a reason to verify with the seller or manufacturer, not by itself evidence of fraud.

Scrutinize elaborate claims that do not add up
A very low price paired with claims of premium core steel, high hardness, and many Damascus layers deserves closer checking, especially if identical product photos appear under multiple brand names. These are warning patterns, not proof of counterfeiting. Damascus layers or a hammered finish also do not establish how well a knife cuts.
Verify the seller, not just the marketplace
For a recognized maker, check its own dealer information or buy from an established specialist seller. A familiar marketplace name alone does not confirm that a particular third-party seller is authorized. When details are unclear, ask who made the knife, where the finished knife was made, and which steel is used in its core.

How to choose between a gyuto and a santoku
Shape and length should fit the way you cook and the space you have. Sakai Ichimonji describes stainless steel as lower maintenance and carbon steel as requiring washing and drying to avoid corrosion. Its guidance is retailer advice, and care instructions vary by knife. For any purchase, follow the maker’s directions. For its Zen Gyuto, Sakai Ichimonji specifically says to wash off dirt, dry thoroughly, and avoid frozen foods.
