Plant certified, disease-free seed potatoes in sunny, well-drained soil, then water consistently, hill soil around the plants, and harvest when the crop reaches the stage you want.
Seed potatoes or botanical seed: what to plant
This guide covers seed tubers—the planting stock used for ordinary home-garden potato growing. Each eye can produce a shoot that grows into a potato plant. Botanical potato seed is a different way to start plants and is not the planting method described here.
Choose certified, disease-free seed potatoes from a reputable grower or distributor. Grocery-store potatoes are a poor default: some are treated to stay dormant, and they may carry disease. As Oregon State University Extension puts it, “Whenever possible, plant only certified, healthy seed potatoes.”
Choose a variety and a planting site
Pick a variety suited to your local growing conditions, intended cooking use, and available garden space. Maturity class and tuber type are also useful comparison points when choosing among varieties. Plant in a sunny spot with fertile, well-drained soil.

Prepare the seed pieces
Small tubers can be planted whole. Cut larger ones into blocky pieces, each with at least one eye, using clean equipment. Utah State University Extension recommends pieces weighing 1.5–2 ounces. Its guidance says soil temperatures of 50–60°F support wound healing and emergence; discard any cut pieces that show decay.
Plant when local conditions are suitable
Use soil conditions and local planting guidance rather than treating a calendar date as universal. Utah State University Extension recommends waiting until soil is at least 50°F. Its May 2020 home-garden recommendations are to plant seed pieces 4–6 inches deep, 10–12 inches apart within rows, and space rows 30–36 inches apart. Frost risk, regional climate, and variety affect the right timing for your garden.

Water, weed, and hill the plants
- Water evenly: Utah State University Extension recommends 1–2 inches of water per week. Irregular moisture can contribute to abnormal tubers.
- Hill soil around the plants: Add soil around growing stems to cover developing tubers and reduce greening from light exposure.
- Control weeds carefully: Avoid shallow cultivation that can damage roots or tubers.
- Avoid heavy fertilization: Excessive fertilizer is not a substitute for suitable soil and steady care.
Harvest for fresh eating or storage
For new potatoes
Dig a few tubers while they are still small and tender if you want new potatoes. You do not need to wait for the whole plant to mature to enjoy an early harvest.
For a storage crop
For potatoes intended for storage, wait until the vines die back and the skins have matured. Reduce watering as plants approach maturity.

Cure and store potatoes you plan to keep
After harvest, cure storage potatoes in a dark, ventilated, humid space. Keep them dry before putting them away, then store them in a dark, cool, ventilated place. Oregon State University Extension recommends 40–46°F for potatoes stored for table use. Discard tubers with excessive greening. Under proper storage conditions, mature late-season potatoes can remain in good condition for seven to eight months, according to Oregon State University Extension in 2024, reviewed in 2025.
