How to Grow Chilies: A Complete Guide from Seed to Harvest

Start chili seeds indoors, transplant only when local frost and temperature conditions allow, then keep plants warm and evenly moist through harvest.

For a reliable chili harvest, start seeds indoors, then move plants outside only after frost danger has passed and local temperatures are warm enough. Chilies need a long, warm growing season, so the right sowing and transplanting dates depend on your climate—not a universal calendar date. The steps below cover choosing a variety, raising seedlings, caring for plants, and harvesting safely.

Choose a chili variety and growing spot

Match the cultivar to your season length, available space, and how you plan to use the fruit. A short summer favors an early or compact variety; a greenhouse, polytunnel, or other protected warm spot can give slower-growing plants more time. Check seed packets or local nursery listings for days to maturity and mature plant size, since those details determine whether a variety suits your climate and containers.

The Royal Horticultural Society (RHS) describes Apache at 80,000 Scoville units, Fuego at 30,000–50,000 SHU, and Hot Thai at 50,000–70,000 SHU. These are cultivar descriptions, not guaranteed measurements for every fruit. See the RHS chili variety guide for its recommendations.

Chilies generally crop best under cover. If growing outdoors, choose the warmest, sunniest, sheltered spot available. For containers, the RHS gives one plant in a 22 cm (9 in) pot as an example, using peat-free multipurpose compost. In beds, use fertile, well-drained soil that retains moisture. Follow cultivar and local guidance for spacing.

When and how to sow chili seeds

Start seeds indoors because chilies need a long season. The RHS recommends sowing from late winter to mid-spring and gives about 21°C (70°F) as a germination temperature. Once seedlings emerge, remove them from the propagator and keep them in bright light at 16–18°C (60–64°F), with compost evenly moist. Pot each seedling separately when it is about 2–3 cm tall; pot on again when roots appear at the drainage holes. See the RHS growing guide.

Regional advice differs. For New Hampshire, UNH Extension recommends sowing about eight weeks before the last frost and says a heat mat can warm the seed medium to 85–90°F for germination. The University of Connecticut Extension suggests starting seeds indoors 8–10 weeks before transplanting. Those are regional recommendations, not a requirement to use a heat mat or a single schedule everywhere. If hot-pepper transplants are scarce where you live, starting from seed may also give you more cultivar choices.

Transplant only when frost and temperature conditions allow

Do not set young chili plants outdoors simply because a particular month has arrived. Use your local last-frost guidance and the temperatures at the planting site. The examples below show why regional recommendations vary:

  • UK, RHS: Plant outdoors in mild locations when night temperatures are reliably at least 12°C (54°F), generally late May or early June in its context. Harden plants off over two to three weeks first.
  • Connecticut, UConn Extension: Wait for soil temperature to reach 65°F before transplanting outdoors.
  • New Hampshire, UNH Extension: Wait until frost risk has passed and nights stay above 50°F.

Check your local extension service or seed packet for guidance tailored to your area. To harden plants off, gradually expose them to outdoor conditions before planting rather than moving tender seedlings straight from indoors into full sun and wind.

Keep plants warm, watered, and appropriately fed

Manage temperature and light

Give chilies a sunny, warm position. The RHS says plants generally cope with minimum night temperatures around 12°C but grow better above 15°C. In greenhouses, temperatures over 30°C can reduce fruiting; ventilation and shading may help during hot spells. These are RHS growing recommendations, not a guarantee of performance for every cultivar or setup.

Water for even moisture

Keep container compost and garden soil evenly moist rather than letting plants swing between dry and saturated. Dry spells can cause flower buds to drop, and containers may need daily checks during hot, dry weather. Iowa State University Extension gives about 1 inch of water per week as a general reference; UConn Extension gives 1–2 inches per week. Treat those as starting points, not fixed schedules: rainfall, heat, soil, container size, and plant growth all affect need. Mulch can help conserve soil moisture.

Feed after flowering begins

For container plants, the RHS recommends a weekly organic high-potassium liquid feed once flowering begins. UC ANR also advises waiting until flowers open and warns that excess nitrogen can encourage leafy growth at the expense of fruit. Follow the feed label and account for nutrients already present in the growing medium.

Check for pests, disease, and fruit problems

Inspect plants regularly, including the undersides of leaves and indoor plants. The RHS lists aphids, grey mould, glasshouse red spider mite, and glasshouse whitefly among common problems. UConn Extension also lists flea beetles, tarnished plant bugs, stink bugs, thrips, and pepper maggot, among others. Identify the problem before choosing a control, and use locally appropriate methods rather than applying pesticide automatically.

If fruit develops blossom-end rot, investigate inconsistent moisture first. UConn Extension links steady watering and mulch with management; the appearance alone does not prove that soil lacks calcium. Where practical, rotate pepper-family crops: UConn advises avoiding a site that held peppers, tomatoes, eggplant, potatoes, or tobacco during the previous three years.

Harvest at the stage that suits your use

You can pick hot peppers at different color stages. UNH Extension says they are hottest when fully ripe, but color and flavor vary by cultivar. Pick green fruit for green use, or let it ripen indoors after picking. Firmly attached fruit should be cut with a knife or clippers rather than pulled, which can damage the plant.

There is a production trade-off: leaving early fruit on the plant to ripen can reduce later flower production and the overall harvest. Later in the season, leaving fruit to color on the plant may make sense when there is less time for new fruit to mature. The RHS says greenhouse harvest can begin from mid-summer into autumn, while outdoor fruiting may start around August in its UK context; neither timing is a universal calendar promise. UF/IFAS gives a Florida-specific estimate of 60–80 days after transplanting (80–100 days after sowing seed) for pepper readiness. Cultivar and conditions affect maturity, so use that as a regional estimate only.

Harvested chilies can be dried, frozen, or pickled. Wear gloves while handling hot peppers and wash your hands afterward; avoid touching your eyes or skin, since pepper compounds can irritate.
