Choose firm, developed stalks, twist and pull each one from near the base, remove and discard the leaf blade, and leave plenty of foliage growing. The right starting year and harvest window vary by region, so take a cautious approach with young plants and stop before late-season growth is needed to build reserves for next year.
When is a rhubarb plant ready to harvest?
Leave first-year plantings alone so they can establish. Guidance differs after that: University of Wisconsin–Madison Extension advises waiting until the second or third year, while the University of Connecticut allows a brief second-year harvest and Purdue Extension recommends waiting two full years before harvesting in the third. For a young plant, waiting until its third year is the cautious choice; consider a light second-year harvest only if local guidance supports it and the plant is vigorous. Harvest when stalks are firm and developed, generally about 8 to 15 inches long. Wisconsin Extension gives that range; Iowa State and Purdue recommend 10 to 15 inches. Stalk color is not a dependable readiness test: cultivars and weather affect how red or green stalks become, and redness does not reliably indicate sweetness. How to harvest rhubarb stalks
- Select a suitable stalk. Choose a firm, developed stalk and avoid disturbing the crown or nearby shoots just emerging from the soil.
- Grip it near the base. Hold the stalk close to the soil line, then twist and pull upward, or pull down and slightly sideways until it releases. Pulling is the usual method described by extension sources.
- Cut only if needed. A sharp knife is optional. If you cut rather than pull, take care not to injure new stalks beginning to emerge.
- Remove the leaf blade. Cut or break off the leafy top and discard it. The stalk is the edible part; do not eat the leaf blades, raw or cooked.
- Refrigerate the stalks promptly. Keep them unwashed until use if following Wisconsin Extension’s storage advice, and use or preserve them without relying on a guaranteed shelf life.
Purdue Extension says rhubarb leaf blades contain oxalic acid, are not edible, and have been associated with poisoning when eaten. Flowering does not make the leaf stalks poisonous; the leaf blades remain inedible whether or not the plant flowers. (Purdue Extension)

How much rhubarb can you take?
Harvest moderately and keep substantial foliage on the plant so it can continue producing and storing energy. Extension recommendations use different limits and timeframes: Wisconsin advises removing no more than one third of the leaves in a year; Iowa State and Purdue say not to take more than two thirds of developed stalks at one time; Maine advises taking no more than half the stalks throughout the summer. These are not identical measures, so a conservative home-garden practice is to take only a portion at a picking, leave plenty of leaves, and stop if stalks become thin or the plant looks weak. When to stop harvesting
Stop in the later part of summer, with the precise timing guided by your local climate. Regional extension advice ranges from spring and early summer to the first half of summer. Maine Extension warns against late-summer harvesting because the plant needs time to store nutrients for winter and next year’s growth. Leave the foliage after harvest season; if seed stalks appear, remove them when continued leaf-stalk production is the goal. (Maine Extension; Purdue Extension)

A hard late-spring freeze is a reason to hold off harvesting. Wisconsin Extension warns that stalk quality may be poor after such a freeze and that oxalic acid may have moved from the leaves into the stalks. This is a specific freeze-related caution, not a general rule that warm summer weather makes stalks poisonous. (Wisconsin Extension; Purdue Extension)

Refrigerate stalks promptly, but published storage windows vary. Wisconsin Extension says unwashed stalks can keep for up to two weeks; Iowa State gives two to four weeks in a plastic bag; UConn and Maine describe only a few days. Because conditions and handling differ and the sources do not reconcile these timelines, use or preserve the stalks promptly rather than treating any one duration as a guarantee.
