You can dry garden herbs by hanging them indoors, using a food dehydrator, warming them in a very cool oven, or microwaving small batches. Air drying needs no special equipment; a dehydrator offers the most control. In every case, wait until the leaves are crisp and crumble easily before storing them.
Choose a method that suits your herbs
Sturdy herbs such as rosemary, sage, thyme, summer savory, and parsley are good candidates for hanging in small bundles. Tender, higher-moisture herbs—including basil, oregano, tarragon, lemon balm, and mint—need to dry faster: slow drying can allow them to mold. Use small batches and good airflow for these herbs. The National Center for Home Food Preservation explains the moisture difference in its herb-drying guidance and The Heat Is On.

These are guidance ranges, not guaranteed drying times. The dehydrator temperature and timing figures below are from the National Center for Home Food Preservation, University of Georgia Cooperative Extension, 2014; UMN’s separate timing guidance is from Growing herbs in home gardens.
Harvest and prepare the herbs
- Harvest most herbs just before their flowers first open, ideally in the early morning after the dew has evaporated.
- Handle stems gently to avoid bruising. Rinse with cool water, shake off excess moisture, and discard bruised, soiled, or imperfect leaves and stems.
- Let surface water drain before drying. Starting with wet herbs adds moisture and can slow the process.
NCHFP provides harvest and preparation guidance; UMN also advises waiting until dew has dried before air drying.

Method 1: Hang herbs indoors to air dry
Tie four or five stems into a small bundle and hang it upside down in a dark, dry, well-ventilated place. For tender herbs, make smaller bunches so air can circulate and drying does not take too long. A ventilated paper bag placed around the bundle can catch falling leaves and seeds; leave the opening loose enough for airflow.
UMN gives 7–14 days as a typical air-drying period, but room humidity and ventilation change the timing. Keep herbs out of direct sunlight: NCHFP cautions that sun drying can cost herbs flavor and color. See UMN’s air-drying directions and NCHFP’s paper-bag and herb-selection advice.

Method 2: Dry herbs in a food dehydrator
Arrange the herbs in a single layer and use the appliance according to its instructions. NCHFP recommends a preheated setting of 95–115°F; in higher humidity, temperatures as high as 125°F may be needed. Its 2014 guidance gives a drying range of 1–4 hours. UMN gives a separate range of 2–6 hours at 95–115°F. Because appliance, humidity, and batch conditions vary, begin checking before the earliest stated time and continue until the herbs pass the doneness test below.
Controlled temperature and airflow make a dehydrator a practical choice for tender herbs that need to dry promptly. NCHFP’s herb-specific instructions are at Herbs; UMN’s method guidance is at Growing herbs in home gardens.

Method 3: Use a very cool oven
Place individual leaves between paper towels and use a very cool oven, checking them frequently until they are crisp and crumble easily. NCHFP says an electric oven’s light may provide enough warmth for overnight drying. Its herb instructions do not establish one exact oven temperature, so do not assume a temperature intended for drying other foods applies to herbs. Follow your oven’s safety guidance and watch closely rather than treating overnight as a guaranteed duration. See NCHFP’s herb-drying instructions.
Method 4: Dry small batches in a microwave
Use the microwave only for small quantities and follow its manufacturer’s instructions. UMN recommends heating in 15-second intervals and checking often so the herbs do not cook. The time will vary with the microwave and the amount of herb, so stop when the leaves are dry and crisp rather than aiming for a fixed total time. Check for doneness before storing
Leaves should be crisp and crumble easily. For herbs dried in a dehydrator, NCHFP says stems should break when bent. If leaves or stems still feel pliable, continue drying and check again; storing herbs that retain moisture risks spoilage.
Store dried herbs and use them in recipes
Remove leaves from stems for storage, or keep them whole and crumble them when needed. Put completely dry herbs in airtight containers and keep them in a cool, dry, dark place away from heat and bright light. If moisture forms inside a container, empty it and dry the herbs again. Dried herbs are more concentrated: NCHFP says they are usually three to four times stronger than fresh herbs. For a recipe, start with about one-quarter to one-third as much dried herb as fresh; UMN’s general guidance is to use one-third as much. These are substitution guides, so adjust to taste.
