You can encourage new celery growth from a cut stalk base: stand it in shallow water in a sunny spot, then plant it in potting mix or a garden bed once roots begin to form. It is a simple growing experiment, but extension guidance does not promise that a grocery-store base will produce a full, mature bunch.
What to expect when you regrow celery
The new leaves and stalks grow from the center of the base. University of Nevada, Reno Extension describes regrowth appearing in about 3–4 days, though timing depends on conditions. The extension instructions support prompting new growth and transplanting a rooted base; they do not establish a success rate, yield, or harvest date for grocery-store celery.
Think of this as a way to produce fresh growth and learn how celery responds, rather than a guaranteed replacement for the bunch you bought.
Start the celery base in water
Two university extension instructions offer different ways to prepare the base. Either can get the cut bottom in contact with water; they are alternatives, not a single required measurement.

- Cut away the stalks, leaving the base at the length you have chosen from one of the extension approaches above.
- Stand the base upright in a shallow bowl or cup. Add enough water to touch the cut bottom, using the corresponding depth in the table.
- Place it in a bright, sunny spot and refresh the water on the schedule for that setup.
- Watch the center for new leaves or stalks. Nevada Extension reports that regrowth may appear in approximately 3–4 days; this is a typical window, not a guarantee.
Move it to soil when roots begin to form
Once you can see roots starting, transplant the base rather than leaving it indefinitely in water. For a pot, use soilless potting mix. Set the base so the roots and lower portion are covered while the new growth remains above the surface. You can also plant it in a garden bed or raised bed, as described by Maryland Extension and Nevada Extension.

A pot is useful when you need to control the growing space; a bed is an option if you have suitable garden conditions. The cited instructions do not establish that one destination is universally better. A bowl or cup is sufficient for the water stage; no special propagation equipment is specified.

Keep the soil consistently moist and provide good light. Established-celery guidance from Utah State University Extension gives a general benchmark of 1–2 inches of water per week, fertile, well-drained soil, and a preferred temperature range of 55–65°F. These are regional cultivation guidelines for celery generally, not a validated schedule or outcome guarantee for a grocery-base project. When can you harvest it?
The sources do not establish a harvest date or mature yield for celery regrown from a grocery-store base. UC Marin Master Gardeners say outer stalks may be harvested when celery is 6–8 inches tall, but that is regional guidance for celery cultivation generally—not a promise that a scrap-grown plant will reach that size.
