For spinach growing in the ground, start with about 1 inch of water per week, counting rainfall. Water deeply enough to moisten the root zone, then check the soil and adjust: sandy soil, hot weather and containers usually need more frequent attention. Keep the soil consistently moist, not saturated.
How much water does spinach need each week?
University of Minnesota Extension advises a thorough weekly soak when the planting receives less than 1 inch of rain that week. Utah State University Extension recommends 1–2 inches of water weekly, and Alabama Cooperative Extension gives the same range, with more during hot summer weather. These are starting points rather than a universal prescription; soil type and temperature affect how quickly the bed dries.
Count rainfall toward the weekly total. If rain has supplied enough water, you may not need to irrigate. If you do water, apply it slowly enough to soak into the soil rather than running off or wetting only the surface.
How often to water in different conditions

How to tell whether the roots are getting enough water
A damp-looking surface does not show whether water has reached the roots. After watering an in-ground bed, use a trowel to check below the surface. University of Minnesota Extension recommends checking how far down the soil is wet; if only the top inch or two is moist, continue watering.
For a container, water enough to reach the bottom of the root zone, then allow free drainage. Avoid leaving the pot or bed waterlogged. Spinach has a fairly shallow root system, so the upper soil can dry before soil used by deeper-rooted crops does. UC Statewide IPM describes spinach as doing best with frequent, shallow irrigation.

Choose a watering method that suits the growth stage
While seeds are germinating
Sprinklers can help get spinach started from seed. Keep the surface seed zone from drying out, while avoiding persistent saturation.
After seedlings are established
Where practical, switch to drip or another soil-level method. UC Statewide IPM recommends flood or drip irrigation for established spinach to avoid excessive moisture on the leaves. Hand watering at the soil is also a practical option. A layer of mulch can help conserve moisture and reduce swings between wet and dry soil.

Why consistent moisture matters
Uneven moisture can make leaves tough, slow leaf development and contribute to off-flavors, according to Utah State University Extension. Consistently moist soil is the goal; saturated soil can favor crown and lower-leaf rot.
Water stress can also interrupt growth and contribute to premature flowering, or bolting. The Royal Horticultural Society identifies lack of water as one cause of bolting. Adequate watering helps prevent drought stress, but cannot prevent bolting caused by heat or day length.
