For a typical home garden, plant seed potatoes about 3 to 5 inches deep, measured from the starting soil surface to the seed piece. Then add soil around the plants as they grow to keep developing potatoes covered. Local extension guidance ranges from 2 to 5 inches for ordinary planting, with some advice to plant late crops deeper.

What depth should you use?

Use 3 to 5 inches as a practical starting range for a standard garden bed, but follow local guidance where available. The recommendations differ by region and sometimes by crop timing:

Source and location Initial planting guidance Later soil cover
Nebraska Extension in Lancaster County Plant whole or cut seed potatoes 2 to 3 inches deep. When plants are about a foot tall, mound 6 to 8 inches of soil along the row.
University of Maryland Extension Plant seed pieces in furrows 3 to 5 inches deep; for late crops, plant 5 to 6 inches deep. Hill around the plants; hill tops should be no more than 6 inches above grade.
UGA Cooperative Extension Plant seed potatoes 4 to 5 inches deep, with eyes facing up. Start hilling when sprouts are about 6 inches high.
University of Florida IFAS Extension Plant seed pieces 4 inches below the soil surface. Add 2 to 3 inches of soil when sprouts emerge.

These are regional recommendations, not results from a controlled comparison establishing one best depth for every garden. Climate, planting date, and method matter. For timing and practices suited to your area, check your local extension service.

How to measure planting depth

Measure the distance from the original soil surface to the seed potato or cut seed piece. Some instructions describe the depth of the furrow instead: place the seed pieces in the furrow, then fill it until the soil is level with the surrounding ground. That initial depth is not the same as the soil added later during hilling.

Why hill potatoes after planting?

Hilling means drawing or adding soil around the growing stems after planting. The extra cover helps keep developing tubers out of sunlight; exposed potatoes can turn green. It also builds up soil around the plants as the tubers expand.

Start hilling according to the method you are following. Nebraska Extension advises mounding when plants are about a foot tall, while UGA recommends beginning when sprouts are about 6 inches high. UC IPM advises hilling when shoots are about 8 inches long and leaving about 4 inches of the plant exposed. In each case, the aim is to cover the developing tubers without burying the entire plant.

Depth depends on the planting method

Furrows and standard garden beds

For a conventional bed, follow a local recommendation for seed-piece depth, then fill the furrow and hill as the plant grows. Maryland Extension recommends 3 to 5 inches for its furrow planting and no more than 6 inches of hill above grade.

Mulch beds

UC IPM describes planting seed pieces or small whole seed potatoes in 3-inch furrows, filling to ground level, and hilling when shoots reach about 8 inches. For its mulch method, it describes adding mulch until the bed is 6 to 10 inches deep. The mulch-bed depth is a later layer, not the initial depth of the seed piece.

Cages and bins

For cage or bin planting, UC IPM recommends starting with 4 inches of soil over the seed pieces and adding more material as the plants grow. This measurement begins at the seed pieces within the container, so it should not be confused with a garden-bed furrow measurement.

Deep mulch

The University of Saskatchewan describes a shallow deep-mulch approach in which seed pieces are set about half their depth into the soil, as well as a hilling method using an initial depth of 4 to 6 inches. These methods begin from different surfaces and use different amounts of covering material, so their figures are not directly interchangeable.
