They are best known as an intensely aromatic cooking spice. Eugenol helps give cloves their distinctive scent, and although researchers have studied clove compounds for biological effects, those findings do not establish that eating cloves prevents or treats disease. Concentrated clove oil is a different product from the spice and can cause severe harm if swallowed in high doses.
What cloves are and where they come from
A clove is a dried flower bud—not a seed or a root—of the evergreen tree Syzygium aromaticum, in the myrtle family. The tree is native to Indonesia’s Maluku Islands, historically known as the Spice Islands, and is also cultivated in India, according to the ICAR-Indian Institute of Spices Research.
Cloves have been used for centuries in food preservation and traditional medicine. Their trade also contributed to economic development in the region. That history is significant, but the available evidence here does not establish a detailed chronology of trade routes, colonial control, or later production shifts. A 2014 review summarizes the plant’s historical and regional importance in “Clove (Syzygium aromaticum): a precious spice”.
How cloves are used in food
Whole dried cloves and ground cloves are pungent flavorings used in foods, beverages, and confectionery. Their intensity means a small amount can make a strong impression; whole buds can be used when a recipe calls for them, while ground cloves distribute through a dish. Choose the form specified by the recipe rather than treating clove oil as a cooking substitute.

The U.S. Food and Drug Administration lists cloves under the names “clove,” “clove bud,” and Syzygium aromaticum, with the technical effect “FLAVORING AGENT OR ADJUVANT.” This is a food-substance listing, not a medical-use authorization. See the FDA’s Substances Added to Food entry for cloves.
Why cloves smell so distinctive
Eugenol is a major constituent of clove oil and contributes to the spice’s characteristic aroma. The ICAR-Indian Institute of Spices Research describes clove oil from buds, leaves, and stems as rich in eugenol. The oil is concentrated compared with the dried culinary bud, so the two forms should not be treated as interchangeable.

What the evidence says about health benefits
Clove and eugenol have been studied for antioxidant and antimicrobial activity, among other biological effects. These findings come from experimental research, including laboratory and animal studies; they do not demonstrate disease prevention or treatment in people. NCBI LiverTox says convincing evidence does not support eugenol or clove extract for advertised medical conditions, and neither is approved for medical use in the United States. A 2022 review also identifies human bioavailability, toxicity, dosage, and efficacy as areas requiring further study: “Culinary Spices in Food and Medicine: An Overview of Syzygium aromaticum”.
One laboratory result illustrates the distinction. A 2005 in-vitro comparison of 26 spices reported clove buds at 168.660 ± 0.024 mmol Trolox equivalents per 100 g dried weight in an antioxidant assay, as summarized by the 2014 review. That is an assay result, not a measurement of a health effect from eating cloves.

Culinary cloves and clove oil are not the same safety question
Using cloves as a food flavoring is different from swallowing concentrated clove oil or eugenol. NCBI LiverTox reports that high-dose ingestion of clove oil can cause severe liver injury. Food-use status does not establish that concentrated oil is safe to ingest, and clove oil should not be used as a home treatment.
