For lining a baking sheet, a reusable silicone baking mat is a practical choice for nonstick baking and easier cleanup. The right one depends on your pan’s dimensions and the exact mat’s temperature rating and placement instructions—not on a single “best” rating for every product. These mats are sheet-pan liners, not general-purpose oven-floor protectors.
What to look for in a silicone baking mat
Compare the exact model against your cooking setup. Manufacturer ratings and instructions vary, so a higher temperature number on one product does not establish what another mat can handle.
- Pan fit: Measure the usable interior of your sheet pan and check the mat’s listed dimensions. A mat that bunches, folds, or overhangs may not sit as intended.
- Temperature limit: Use the stated rating for that product, and follow any conditions attached to it.
- Placement: Check whether the mat must sit on a tray and whether broiler or direct-heat use is prohibited.
- Care: Confirm cleaning and storage directions, including whether dishwasher use is allowed.
- Reusable or disposable: Choose a mat for repeated use; choose parchment when discarding the liner is more convenient for the task.

Can a baking mat go directly on the oven rack?
Do not assume it can. Amazon Basics specifies a tray rather than direct oven-rack placement. These instructions are product-specific; check the package or manual for the mat you own and use the supporting pan it requires.

A silicone baking mat is not automatically an oven-floor liner. Gorilla Grip explicitly says not to use its mat as one. Use a mat only in the placement and application its manufacturer permits.

Parchment is useful when you want a disposable liner, need to wrap or package food, or are handling sticky one-off work such as candy or caramel. Fat Daddio’s describes those uses as situations where a disposable liner can be convenient. USA Pan describes its parchment for baking, roasting, steaming, freezer-to-oven preparation, and food packaging, and says to keep its parchment at or below 450°F (230°C). That limit is USA Pan’s guidance, not a universal rating for all parchment.
A reusable mat suits repeated sheet-pan baking and cleanup; parchment suits tasks where throwing the liner away is preferable. The cited manufacturer information does not establish that one always produces better baking or roasting results.
