What is the best deep fryer for Indian food?
The best fit is the fryer that lets you fry your normal batch without crowding, gives you useful temperature control, and can be handled and cleaned according to its manual. No current model-versus-model evidence establishes a winner, so compare the exact model’s capacity, basket, controls, oil handling, footprint and safety instructions rather than relying on a “best” label.
Match capacity to the food you actually fry
Check the appliance’s stated oil-fill range and MAX mark, then consider whether its basket can hold your usual samosas, pakoras or other foods with space around them. A representative Hamilton Beach 35200 manual specifies 1–2 L of oil for that particular 2 L fryer and says not to exceed its MAX mark; that is a model-specific instruction, not a universal capacity recommendation. Check controls, cleanup and safety features
- Temperature control: A control or display can help you adjust for different recipes and allow oil temperature to recover between batches. Available sources do not compare temperature accuracy or recovery across fryer models.
- Basket and opening: Make sure the foods you plan to cook fit without being packed tightly. A larger stated capacity does not guarantee a useful basket shape.
- Oil handling and cleaning: Check the exact manual to see whether the pot and basket are removable and how it directs you to cool, drain and clean the appliance. Do not assume a fryer is easy to clean from its product category alone.
- Safety and placement: Look for clear operating instructions and any safety features relevant to your needs. Use the unit on a stable, heat-resistant surface and follow its manual; never move a fryer while it is operating or contains hot oil.
- Space and oil use: Compare the appliance’s footprint and oil requirement with how often you fry. For a small household or occasional batches, a kadhai may be more practical.
Can I fry samosas and pakoras in an electric deep fryer?
Yes. An electric fryer can be used for foods such as samosas and pakoras if the food fits the basket, the appliance is filled and operated as its manual specifies, and you fry in batches rather than overcrowding. Crispness also depends on the recipe, moisture, batch size and oil temperature; there is no established universal temperature chart for every Indian fried food.
What temperature should oil be for samosas?

For context, USDA FSIS says oil for deep-frying is usually maintained at 350–375°F (about 177–191°C). That is general deep-frying guidance, not a replacement for a recipe’s method. The same agency describes deep-fry thermometers as measuring 100–400°F and being used for hot oil. A thermometer can be useful if your fryer does not have a trustworthy display. What about fillings containing meat or seafood?
Oil temperature is not a substitute for checking that a filling has reached a safe internal temperature. USDA FSIS lists 165°F for poultry and 145°F for fish and shellfish. Use a food thermometer to check the food itself. USDA FSIS: Food Thermometers.

Is a deep fryer better than a kadhai?

How much oil does a home deep fryer need?
Use the fill range and markings in the exact appliance manual; there is no single amount for all fryers. Never go below the stated minimum or above the MAX mark. A fryer’s listed oil capacity is not the same as how much you need for one recipe: the appliance needs enough oil to operate as designed, while batch size is limited by the basket and safe headroom. Oil choice, reuse and safe handling
Choose an oil that suits the recipe

Follow the guidance that applies to your location
For an India-focused audience, FSSAI Eat Right India advises not to reheat or reuse the same oil for frying and suggests using previously used oil in vegetables, curries or dals. USDA FSIS gives different guidance for its audience: it describes straining and storing oil for reuse, and says to discard oil if it becomes cloudy, foams or smells foul.
