Best Pellets for Smoking Salmon: A Guide to Choosing the Right Wood

Alder is a mild, well-supported default for hot-smoked salmon, while apple and cherry offer alternatives and hickory or mesquite deliver bolder smoke. Learn how to choose cooking pellets and monitor temperatures safely.

For most hot-smoked salmon, food-grade alder pellets are the best-supported default: their mild smoke complements the fish without overwhelming it. Apple and cherry are good alternatives for a slightly sweeter character; choose stronger woods such as hickory only if you want a bolder smoke. This is a wood-choice recommendation based on cooking guidance, not a tested ranking of pellet brands.

Which pellets are best for smoking salmon?

Start with alder. Traeger recommends alder for salmon, and salmon producer MOWI describes it as a delicate wood whose subtle flavor suits the fish. Neither source presents a controlled comparison of pellet brands or woods, so treat alder as a well-supported starting point—not a proven winner in a taste test.

Alder: the restrained default

Alder’s mild smoke is a practical fit when you want the salmon’s own flavor to remain prominent. It is also the clearest choice when cooking for people with different preferences, since it is less assertive than woods such as hickory or mesquite. Traeger’s salmon smoking guide recommends alder, as does MOWI’s home-smoking guide.

Apple and cherry: mild alternatives

Choose apple or cherry if you want a mild smoke with a somewhat sweeter impression. Traeger also suggests pecan and maple for a sweeter profile. Weber’s smoked-salmon recipe lists cherry, apple, hickory, or its GrillMaster Blend as options, showing that recipes can accommodate different levels of smoke intensity. Weber’s recipe does not make those options interchangeable in flavor; use them as choices, not as a ranking.

Hickory and mesquite: bolder smoke

Hickory brings a stronger smoke character, and mesquite is also among the more forceful choices. MOWI cautions that strong woods can overpower salmon’s delicate flavor. That does not make them categorically wrong: Weber includes hickory as an option, so the difference is largely one of recipe and preference. If you are unsure, use alder first and save a stronger wood for a batch where a pronounced smoke flavor is the goal.

What to look for in salmon-smoking pellets

Choose pellets intended for cooking, rather than heating pellets, and keep them dry. Traeger warns against using heating pellets and recommends storing cooking pellets in a dry, airtight place. Damp or compromised pellets can make ignition and temperature performance less reliable. Traeger’s pellet guidance covers appropriate use and storage.

The available guidance does not establish a numerical flavor score, burn-rate comparison, or brand-by-brand winner. Pellet condition and the wood species are more useful decision points than an unsupported claim that one brand is best.

Prepare salmon so smoke can adhere

MOWI’s home-smoking guide describes brining as a way to season the fish and draw out moisture. Drying the surface afterward helps form a tacky pellicle, which helps smoke adhere. Follow a recipe’s brining and drying directions rather than assuming every fillet needs the same time; thickness and recipe method can differ.

  1. Brine according to your chosen recipe. This seasons the salmon and draws moisture from its surface, as MOWI explains.
  2. Dry the fish before smoking. Allow the surface to become tacky so smoke can adhere.
  3. Smoke with temperature monitoring. Use the recipe’s specified smoker settings and check the fish with a food thermometer.

Monitor both the smoker and the salmon

USDA Food Safety and Inspection Service guidance says: “To ensure meat and poultry are smoked safely, you’ll need two types of thermometers: one for the food and one for the smoker.” The agency’s smoking guidance gives a smoker-air range of 225–300°F. These are general smoking recommendations; a particular salmon recipe may specify a different cooking sequence.

Recipe endpoints are not uniform, so do not combine their temperatures as if they were one universal method. Traeger’s salmon guide calls for 225°F for 3–4 hours, or until the fish reaches 145°F internally. MOWI’s hot-smoking method starts at 140–150°F for an hour, then raises the smoker to 175°F for another 1–2 hours; it gives an internal range of 130–140°F. Weber’s recipe begins around 250°F, activates SmokeBoost after reaching 225°F to bring ambient temperature to 165–200°F, and continues until the salmon reaches 135°F.

Those figures belong to their respective recipes, and the lower endpoints in MOWI and Weber are not a substitute for general food-safety guidance. Follow an authoritative safety recommendation for the fish’s internal temperature, and use the recipe’s timing and smoker settings only within that safety framework. Hot smoking is different from cold smoking

Pellet choice is not the only difference between smoking methods. Traeger describes hot smoking as 180°F or above and cold smoking as normally below 80°F. MOWI describes cold smoking as below 85°F, says it does not cook the fish, and notes that it often takes 24 hours or more and requires specialized equipment and careful attention to food safety. The two sources use slightly different temperature descriptions; cold smoking should not be treated as a simple lower-temperature version of a hot-smoked salmon recipe.
