Best Pressure Cookers for Beans: How to Choose One and Cook Beans Safely

Choose a pressure cooker for beans by its usable batch size, bean guidance, release method, and cleanup. Then follow your model’s manual for soaking, liquid, timing, and safe release.

A pressure cooker is a practical way to cook dried beans, but there is no tested brand winner established here. Choose a model by usable batch size, bean-specific instructions, pressure controls, release method, and cleanup. A six-quart electric cooker such as the Instant Pot Duo is one example—not a comparative “best.”

How to choose a pressure cooker for beans

Beans expand and foam as they cook, so the cooker’s stated capacity is not the amount of beans you can cook at once. Instant Pot and university Extension guidance advises keeping beans, liquid, and other ingredients at or below the half-full mark. This makes usable capacity and clear fill markings especially important.

  • Capacity: Match the cooker to your usual batch, allowing for the half-full limit.
  • Bean instructions and pressure controls: Check the exact model’s manual for dried-bean guidance and confirm it supports the settings required by the recipe.
  • Release method: Look for a release mechanism you can operate safely, and follow the cooker manual and recipe for when to release pressure.
  • Cleanup: Compare which parts are dishwasher-safe and how the model’s sealing ring and other components are maintained.
  • Cooker type: Do not assume a timing written for a 15-psi stovetop pressure cooker will work unchanged in an electric model.

Example: Instant Pot Duo 6QT

The manufacturer lists the Instant Pot Duo 6QT as a six-quart model with seven cooking functions, including pressure cooking. Its product page says the inner pot and lid are dishwasher-safe. These are manufacturer-published specifications, not independent test results; see the Instant Pot Duo product page for current details.

Do you need to soak beans first?

Soaking is not essential for every pressure-cooker bean recipe. North Dakota State University Extension’s 2024 bulletin describes tests using six-quart Cuisinart, Fagor, and Instant Pot cookers; in most tests, the team found soaking unnecessary. It also notes that the preferred process may vary by cooker. For your own model, follow its manual and a bean-specific recipe rather than treating one trial or recipe as universal. Read the NDSU Extension bulletin.

If you soak beans for more than four hours, NDSU Extension recommends refrigerating them. It warns that room-temperature soaking can allow bacteria to grow or produce toxin.

How much water or broth should you use?

Use the liquid amount specified by the recipe and your cooker’s manual, and count the beans, liquid, and any other ingredients toward the cooker’s fill limit. For beans and other expanding foods, Instant Pot and Colorado State University Extension guidance says not to fill above the halfway mark. Overfilling can cause foaming and may clog the steam-release pipe. Check the marking on your exact cooker rather than judging the level from the pot’s total capacity. Instant Pot’s safety FAQ and Colorado State University Extension’s guidance explain the precautions.

How long do beans take in a pressure cooker?

There is no single reliable time for every bean. Timing varies with the bean, whether it was soaked, the cooker, and the recipe. Idaho Bean Commission guidance gives 15–20 minutes for soaked beans and 20–25 minutes for unsoaked beans at 15 pounds pressure, and says older beans may need more time. These are broad recommendations for that pressure context—not a universal setting for electric pressure cookers. See the Idaho Bean Commission’s bean-cooking guidance.

Use your appliance manual and a recipe written for your bean and cooker type. A stovetop cooker’s 15-psi timing should not be transferred uncritically to an electric model. Also allow time for the appliance to build pressure and release it: the programmed countdown is only part of the total cooking time.

At higher elevations

Colorado State University Extension advises adding 5% cooking time for every 1,000 feet above 2,000 feet for Instant Pots. Treat this as that source’s guidance for the named cooker context, not a rule established for every pressure cooker. See the Colorado State University Extension guidance.

Which pressure-release method should you use?

For beans, natural release is a sensible default when the Instant Pot guidance or your recipe calls for it. Instant Pot says, “Natural Release (NR) is recommended for foods with large liquid volume or high starch content such as oatmeal, beans, porridge, and soups.” Its FAQ warns that quick release can splatter with these foods. Follow the manual for your particular model; Colorado State Extension discusses waiting at least five minutes before switching to quick release in its guidance, but that timing should not override your cooker’s instructions. Read Instant Pot’s release guidance and Colorado State University Extension’s release guidance.

A pressure cooker is not a pressure canner

A pressure cooker suitable for cooking dried beans is not automatically safe for canning them. Oregon State University Extension says pressure cookers heat and cool too quickly to process canning jars adequately, and that electric pressure cookers have not been established by USDA or university research as adequate and stable for processing low-acid foods. Use a tested pressure-canning process and appropriate equipment for canning beans; do not rely on a dinner-cooking recipe. Read Oregon State University Extension’s canning guidance.
