The best slicer for jerky depends on the cut you want: a dedicated manual strip cutter makes uniform strips in one pass, while an adjustable meat slicer offers more control over thickness and can handle other slicing jobs. Before choosing, check the model’s permitted use, feed dimensions, cleaning instructions, and the effort its setup requires. Whichever tool you use, follow a complete food-safety method; the slicer itself does not make jerky safe.
Which kind of slicer suits your jerky?

These approaches are not interchangeable. A strip cutter imposes a set geometry; an adjustable slicer gives you a choice of blade setting. Compare the actual model’s permitted use and instructions rather than assuming that every slicer is suitable for every kind of meat.
What to look for in a dedicated strip cutter
A manual cutter is the most direct fit if you want repeated strips rather than flexible slicing. Its fixed blades can make the job more consistent, but the result depends on the cutter’s design and the size and shape of the meat you can feed through it.
One documented example is the Weston 07-3801-W-A. MeatSlicer.org’s documentation-based guide reports that it has 32 blades and accepts cuts up to 5 inches wide and 1.25 inches thick; those are specifications reported by that guide, not independently confirmed here against a current manufacturer manual. The same guide describes fixed 1/4-inch spacing. Check the current product instructions and configuration before buying, and make sure the dimensions suit the cuts you plan to prepare.

Also consider the practical work around each batch: how much force feeding meat requires, whether the cutter comes apart, and how its manufacturer says to clean it. A tool that is difficult to disassemble or clean may be a poor fit for your routine even if its strip dimensions are right.
What to look for in an adjustable electric slicer
An adjustable slicer is a better match if you want to choose slice thickness or use the same appliance for other foods. Secondary comparison guides report settings around 1/8 to 1/4 inch for several models, but those figures are not universal specifications. Confirm the adjustment range and permitted foods in the instructions for the exact model.

- Food and temperature limits: Check whether the manufacturer permits slicing the kind of meat you plan to prepare. Do not assume a slicer can handle frozen or partially frozen meat unless its instructions say so.
- Feed dimensions: Verify that the tray, carriage, or opening accommodates your cuts without awkward trimming.
- Duty limits: Look for the manufacturer’s guidance on operating time and cooling between batches. A wattage rating alone does not establish suitability for continuous operation.
- Safety and cleaning: Check for blade guards or other safety features, and read the cleaning and storage instructions before deciding whether the setup fits your kitchen.
An adjustable blade can help you target a thickness, but it does not guarantee perfectly even strips or replace careful preparation. Consider how much setup and cleaning you are willing to do for the flexibility.
How to get the cut ready for jerky
The National Center for Home Food Preservation recommends partially freezing meat to make it easier to slice and cutting strips no thicker than 1/4 inch. It notes that strip thickness affects the safety methods it describes. See its jerky guidance for the full instructions.

- Partially freeze the meat to make slicing easier, following the official guidance.
- Use a cutter or knife to make strips no thicker than 1/4 inch, as recommended by the National Center for Home Food Preservation.
- Follow a complete, researched jerky method for preparation, heating, and drying; do not treat a particular slicer setting as a safety step.
For an adjustable slicer, choose a setting that lets you produce strips within the recommended thickness, then check the actual cut. A fixed-strip cutter should be judged by its documented dimensions, not by its product category alone.
Jerky safety depends on the full method
The National Center for Home Food Preservation says that heating meat to an internal temperature of 160°F can decrease the risk of foodborne illness, while warning that no method can guarantee 100% safety. Its guidance describes heating in marinade before drying or heating dried strips in an oven; for the pre-drying method, it recommends checking several strips with a metal-stem food thermometer if possible. Follow the full instructions and current local food-safety guidance rather than relying on a slicer, marinade, dehydrator, or visual dryness alone.

Read the official jerky preparation instructions and its drying FAQ. The 160°F figure is a risk-reduction target in the methods described there, not a guarantee that a finished product is safe.

- Choose an adjustable electric slicer if thickness control and broader kitchen use matter, and the manufacturer permits your intended use.
- Use a knife and board if your batches are small and you can cut safely and consistently.
