Best Donabe Rice Cookers: How to Choose and Use One for Rice

Nagatani-en’s Kamado-san is its named donabe rice cooker, but the right choice depends on your cooktop, batch size, and willingness to follow clay-pot care instructions.

If rice is the main reason you want a donabe, Nagatani-en’s Kamado-san is the clearest rice-specific choice in the available product information: the maker says it was designed to make everyday donabe rice easier without readjusting the heat. It is not a universal best for every kitchen. Check the exact model’s cooktop compatibility and rice capacity, and be ready to follow its first-use and drying instructions.

Which donabe should you buy for rice?

Start with the cooking job, not appearance or a broad “best” ranking. Nagatani-en makes donabe for particular methods, including rice cooking, steaming, and smoking. Its Kamado-san donabe rice cooker is its named rice-focused option; the maker describes it as designed to simplify everyday donabe rice without the cook having to readjust the heat. Those are manufacturer descriptions, not results from independent comparative testing.

If rice is your priority, choose a model explicitly intended for rice rather than assuming that any clay pot will perform the same task. If you want one pot mainly for another cooking method, compare models designed for that use instead. For an anecdotal example of the question shoppers ask, one community discussion phrases it as “Which Donabe to buy?”—but that single example does not establish how common the question is.

Check cooktop compatibility before choosing a model

Do not assume that a donabe will work on induction simply because it is made of clay, or that an induction model sold for one market suits every induction cooker. Nagatani-en says its standard donabe do not work on induction. Its IH line is designed for induction cooktops marketed in Japan, and the maker does not recommend using its IH donabe to cook rice: water can dry up near the end of cooking, potentially breaking the pot.

Before buying, check the exact pot’s product information and the cooktop and pot manuals. The maker’s guidance is model- and market-specific; the label “IH” alone is not enough to establish compatibility with your appliance or suitability for rice.

Match the stated capacity to your usual batch

Compare the model’s stated rice capacity with the number of servings you normally make. The Wasabi Company listing checked for this guide showed 2-cup and 3-cup Kamado-san models, but retailer stock and available models can change. Treat those sizes as examples from that listing, not a complete or current catalogue.

Rice-cup measures are not necessarily the same as a standard US measuring cup. For example, the recipe below specifies 3 rice cups as 540 ml, alongside the equivalent 2 1/4 standard cups. Use the measurement convention in the recipe and instructions for your exact cooker.

What to check about first use and care

Prepare an Iga donabe before its first cooking

Nagatani-en says its Iga donabe require medome, a first-use treatment in which rice starch helps fill pores in the clay. The maker’s FAQ describes making a thick rice porridge: rinse the pot, wipe it, and let it air dry completely. Add leftover rice and water, bring the mixture to a boil over low heat, and cook until thick. Turn off the heat, let it cool for more than an hour, then remove the porridge and rinse the pot. Follow the directions supplied with your own model if they differ.

The pot must be fully dry before it is heated. Nagatani-en warns that heating a wet donabe may cause it to crack.

Wash, dry, and store it carefully

  • Hand wash with lukewarm water and a sponge; if you use mild detergent, rinse it promptly.
  • Wipe the pot, then let it air dry completely upside down in a well-ventilated, low-humidity place.
  • Do not put it in a dishwasher. Store it only after it is fully dry.

These are Nagatani-en’s care directions for its donabe. The instructions supplied with the exact model you buy should take precedence.

A published starting method for short-grain white rice

Cook’s Gazette reproduces a recipe attributed to Naoko Takei Moore’s Donabe: Classic and Modern Japanese Clay Pot Cooking (Ten Speed Press, 2015). It is a starting point for the specified rice and pot, not a universal timing guarantee; the recipe notes that timing varies with rice quantity and stove conditions. Check your cooker’s own instructions before using it.

  1. Measure 3 rice cups (540 ml) of short-grain white rice and 600 ml water.
  2. Rinse and drain the rice, then soak it in the donabe for 20 minutes.
  3. If your cooker has a double lid, position the lid holes perpendicular to each other.
  4. Heat over medium-high. Once steam appears, cook for 2 more minutes.
  5. Turn off the heat and leave the pot undisturbed for 20 minutes, then fluff the rice.

The recipe’s quantities and timings belong to this published method. Adjust only in line with the directions for your particular cooker and the conditions in your kitchen.

Where to check availability

Nagatani-en says it generally does not ship internationally and directs customers to nearby retailers. It names TOIRO as its official US agent and an English-language resource. Check its current regional information and local stock before ordering. A Wasabi Company Kamado-san listing checked for this guide was out of stock, so that listing does not establish present availability.
