Best Commercial Undercounter Ice Makers: How to Choose by Use Case

Choose a commercial undercounter ice maker by matching ice style and peak demand to its condition-specific production, bin capacity, installation footprint, and site utilities.

The best commercial undercounter ice maker is the one that can keep up with your busiest service, makes the ice your customers expect, and fits your site’s space and utilities. There is no independently tested universal winner in the available evidence, so this guide compares two manufacturer-documented examples and explains how to choose by demand, ice style, installation, and upkeep.

Start with the kind of ice your service needs

Ice style is a service decision, not a universal quality ranking. A retailer buying guide distinguishes common use cases this way: standard cubes for general beverage service, gourmet cubes where presentation matters, nugget or pearl ice for a chewable-ice program, and flake ice for cooling or display uses. Compare production and storage separately

A machine’s production rating estimates output over 24 hours under stated conditions; its bin capacity is the amount it can hold as a buffer for service peaks. Neither figure alone tells you whether the unit will meet your busiest shift. Check the manufacturer’s rating conditions and account for the actual ambient and incoming-water temperatures at your site.

Scotsman UC2024: cube ice with a larger stated buffer

Scotsman lists the UC2024 at 227 lb per 24 hours when ambient air is 70°F and water is 50°F, and 166 lb per 24 hours at 90°F ambient and 70°F water. Its listed storage capacity is 80 lb; that is bin capacity, not additional daily production. The manufacturer also publishes energy use of 5.64 kWh per 100 lb and water use of 23.7 gallons per 100 lb for the air-cooled model. Undercounter equipment still needs room for its cabinet, ventilation, connections, and service access. Measure the actual opening and confirm what the selected model requires; do not assume a nominal width is the full installed footprint.

Choose the right fit for the site

When floor or counter space is tight

The UC2024 is listed at 24 inches wide and 28.5 inches deep, while Ice-O-Matic lists the UCG060A at 15.5 inches wide and 20.25 inches deep. Compare the full dimensions, including height, against the opening and the route used to move the machine into place. Scotsman describes its UC2024 as “Only 24” wide, this ice maker can be placed in the tightest locations.” That is manufacturer product-page language, not a guarantee that it will fit every tight installation.

When ventilation or heat rejection is the constraint

The UC2024 is front breathing and is offered with air- or water-cooled condenser options; the cited air-cooled specification is the one associated with its published energy and water figures above. The UCG060A is listed as air condensing with front air discharge. Match airflow to the cabinet layout and follow the clearance instructions for the exact configuration. A front discharge does not remove the need to keep the specified intake and service areas unobstructed.

When you are planning around electrical service

Both cited product pages list 115/60/1 for their referenced configurations. Verify the nameplate and installation documentation for the exact model being supplied, as well as your local electrical requirements, rather than relying on a general product-family description.

Plan cleaning, water treatment, and service access

Ice equipment needs a maintenance plan that fits the exact machine and the water at your site. Scotsman lists an external removable air filter for the UC2024 and links to service manuals and cleaning and maintenance resources. Use the model-specific instructions to identify approved cleaners, water-treatment requirements, cleaning intervals, and filter parts. Do not assume a generic filter or cleaner is compatible. Before purchase, ask the seller or manufacturer about local service coverage, warranty terms, replacement-part availability, and access needed to perform routine maintenance; those details are not established for both examples here.

What Hoshizaki’s refrigerant announcement does—and does not—tell buyers

Hoshizaki Corporation’s January 22, 2025 announcement described a transition from HFCs to natural refrigerants for upgraded cube ice makers, with successive shipments planned to begin in early April 2025 through its 15 Japanese sales companies. The announcement covered 22 models, including nine undercounter models, with stated undercounter daily capacities from 25 to 95 kg. This is information about the announced Japanese lineup; it does not establish the refrigerant or specifications of every Hoshizaki machine sold in other markets. How to make the final choice

  1. Define service demand. Estimate ice use across a typical day and the busiest service periods, then distinguish the production rate you need from the bin capacity that provides a peak buffer.
  2. Choose the ice form. Select cubes, gourmet cubes, nugget or pearl ice, or flake according to the drinks, food, or display use you actually have.
  3. Measure the installation. Check width, depth, height, delivery access, airflow, and service clearances against the exact model’s installation documentation.
  4. Verify site utilities. Confirm electrical supply, water connection, drain route, and any pump requirement with the model manual and installer.
  5. Compare ratings on equal terms. Use production figures only with their stated ambient and water conditions; compare energy and water use only when the published basis and configuration are comparable.
  6. Confirm ownership support. Get current warranty, local service, parts, and maintenance requirements in writing from the seller or manufacturer.
