Don’t rely on one charcoal quantity for every cook. Weber’s U.S. Charcoal Grill Owner’s Guide provides fuel amounts by grill diameter and distinguishes direct from indirect cooking. Find the row for your kettle size and method rather than treating a count for another kettle or setup as a general rule.
Set up briquettes for a long, low-and-slow cook
For extended cooking, Weber describes a “snake” arrangement of briquettes for a 57 cm kettle. Its Australia/New Zealand guide gives an approximate duration of 8 to 12 hours for this low-and-slow setup. Light the charcoal with a chimney starter
- Choose the briquette quantity using the owner’s guide for your kettle diameter and cooking method.
- Load the briquettes into a chimney starter and use lighter cubes to light them, following Weber’s chimney-starter instructions.
