Avocado is the fruit of Persea americana. The California Avocado Commission, an industry organization, traces its origin to south-central Mexico and reports that domesticated seeds have also been found in Peru. How do you know when an avocado is ripe?
Use gentle pressure in the palm of your hand, as the California Avocado Commission recommends. A ripe avocado should yield gently; avoid squeezing with your fingertips, which can bruise the flesh. Color is a supporting clue, not a universal test: Hass skin usually turns dark green or black as the fruit ripens, but some other varieties remain light green. How should you wash and cut an avocado?
- Wash the whole fruit before cutting. This helps keep surface dirt from being transferred to the flesh by the knife.
- Cut around the pit. Use a stable cutting board and take care with the blade.
- Remove the pit gently. The commission advises against striking the pit with a knife and twisting. Instead, use your fingers to lift it out carefully once the halves are separated.

How do you store whole or cut avocados?
Whole, ripe fruit

Cut fruit
For a cut avocado, the commission recommends applying lemon juice, lime juice, or white vinegar to the exposed surface, covering it tightly with plastic wrap or placing it in an airtight container, and refrigerating it. Its guidance does not establish a guaranteed storage life for cut fruit, so use your judgment about its condition rather than treating the recommendation as a shelf-life promise. What is different about Hass avocados?
Hass is a named variety. Its skin generally darkens as it ripens, unlike some varieties that stay green, so the same color cue does not work for every avocado. The California Avocado Commission’s 2020 history account describes Hass as richer and nuttier than other types; that is the commission’s characterization, not a complete or independent comparison of varieties. Are avocado import rules relevant to shoppers?
U.S. import requirements concern commercial shipments, not how a household should select fruit. USDA Agricultural Marketing Service guidance says imported avocado shipments weighing more than 55 pounds require inspection and certification, and sets grade and maturity provisions with listed variety exceptions.
