For a crisp, well-browned loaf, a bread cloche traps heat and steam around the dough. In Good Housekeeping’s published test, its four relevant category picks were the Le Creuset Enameled Cast Iron Bread Oven, Lodge 5 Quart Pre-Seasoned Cast Iron Double Dutch Oven, Challenger Breadware Cast Iron Loaf Pan and Emile Henry Bread Cloche. They suit different priorities: overall performance, value and versatility, room for larger bakes, or a lighter ceramic design.
One clarification: Good Housekeeping’s May 30, 2024 article is titled “5 Best Bread Baking Cloches, According to Testing” and lists five products, including a King Arthur pick. The four below are its other category winners—not a separately documented four-product test. Read the Good Housekeeping comparison and test details.
How the four picks compare
| Product and category | Material and oven limit | Listed weight | What the test reported | Main trade-off |
|---|---|---|---|---|
| Le Creuset Enameled Cast Iron Bread Oven Best overall |
Enameled cast iron; 500°F | 9.7 lb | Browned yeasted bread and sourdough; produced the highest rise among the cloches tested. | Heavy, though both base and lid have handles. |
| Lodge 5 Quart Pre-Seasoned Cast Iron Double Dutch Oven Best value |
Cast iron; 600°F | 13.1 lb | Even browning, fine crumb with few large holes, and crusty chew. | No top handle when configured as a Dutch oven or bread baker. |
| Challenger Breadware Cast Iron Loaf Pan For serious bakers |
Cast iron; 475°F | 20 lb | Room for large boules and small baguettes; testers also reported evenly browned, crispy loaves, rolls, biscuits and flatbreads. | Its substantial weight was a downside for every home tester. |
| Emile Henry Bread Cloche Best ceramic |
Ceramic; 500°F | 5.2 lb | Lightly golden boules with airy crumb and crusty exterior; ridges helped reduce sticking and crisp the bottom. | The short lid handle was awkward to grip with oven mitts. |
Specifications and test observations in the table are those reported by Good Housekeeping; oven limits are listed ratings, not recommendations to exceed the maker’s instructions. The publication also tested the King Arthur Baking Company Cloche Bread Baker with Handle as a fifth product. Its loaf had a crisp crust, but browning was uneven and bread stuck more than in the other tested cloches.
Which bread cloche is right for you?
Choose Le Creuset for the strongest all-round test result
Good Housekeeping named the Le Creuset its best overall pick. Its test reported the highest rise among the cloches and good browning with both yeasted bread and sourdough. Handles on the base and lid make it easier to move and uncover than designs without a lid handle. At 9.7 pounds, it is still a substantial piece of cookware.

Choose Lodge if you want a baker that does more
The Lodge is a cast-iron double Dutch oven: its deep pot and sauté-pan lid can be used as a conventional Dutch oven or arranged as a cloche. That versatility is useful if you want more than dedicated bread cookware. Its reported even browning and fine crumb make it a credible bread option, but note the lack of a top handle in bread-baking configuration. Its listed oven-safe limit is 600°F, the highest of these four products.
Choose Challenger for room and range, if the weight works for you
The Challenger’s roomy shape accommodated large boules and small baguettes in the Good Housekeeping account, and testers used it for more than loaves, including rolls, biscuits and flatbreads. At 20 pounds, it is by far the heaviest of these four listed models. Consider where you will store it and whether you can safely lift it when hot and loaded.

- Hand washing with warm soapy water and nylon scrub brush, metal tools may leave scratches. Always use oven mitts or potholders while moving cast iron cookware from the heat source.
Choose Emile Henry for a lighter ceramic option
At 5.2 pounds, the Emile Henry is the lightest of these four listed products. Testers reported easy cleanup, an airy interior and a crusty exterior; ridges on its base helped prevent sticking and crisp the loaf’s bottom. The short lid handle can be difficult to grasp through oven mitts, so handle ergonomics matter as much as material.
What the test did—and did not—establish
Good Housekeeping’s Kitchen Appliances and Innovation Lab assessed weight, shape, capacity and handle placement, then baked yeasted white bread and evaluated color, crust and crumb. Its method describes weighed ingredients, timed proofing periods, three scores per loaf and baking in a preheated oven with cloches starting at room temperature. The testers assessed loaf height and color, then sliced the bread to judge crust crispness, interior tenderness, crumb texture, evenness, flavor and texture.

- Made in France. The Bread Cloche is made of all natural materials and is backed by a ten-year warranty.
- The ceramic Bread Cloche with its bell shaped cover allows you to proof your bread directly in the bread cloche
- The lid traps steam from the baking bread to create an environment similar to a steam-injected oven. The steam gives the bread a crunchy, chewy crust. Our ceramics allow our products to be taken directly from the freezer to the hot oven (+250°C/500°F)
- The Emile Henry Bread Cloche is sized for a round loaf made with 3-cups of flour. Easy to clean, dishwasher safe.
- Recipe and Instruction booklet included.
Those are the publication’s methods and reported observations, not an independent test of the products. The result is useful as a controlled comparison of the models included, but the stated findings should not be read as a guarantee for every dough, recipe or oven.
What to consider before buying
Material affects handling and crust
Good Housekeeping says all materials in its test were effective. It notes ceramic bakers may need a longer bake, while cast iron may produce a darker crust. These are general considerations, not a fixed adjustment for every recipe: follow the product’s instructions and judge your loaf rather than assuming a particular bake-time change.
Rank #4
- MADE IN FRANCE. Made of all natural materials and manufactured using Emile Henry's proprietary HR ceramic (high resistance)
- CONTROLLED TEMPERATURE & HUMIDITY. The dome of the ceramic Bread Baker produces the same level of humidity as a traditional bread oven to creat a thick, crispy crust and a light, airy inside.
- VERSATILE. When used upside down, the lid can also be used as a mixing bowl for preparing the dough and proofing
- EASY RELEASE & CLEAN. The highly resistant glaze and the criss-cross pattern on the platter prevent the loaf from sticking and make cleaning easy. Dishwasher safe
- 10 YEAR GUARANTEE. Our warranty covers any production fault or quality problem with the product when used in a normal domestic environment, and respecting the care and use Instructions.
Match the shape to the loaves you bake
Round vessels suit round loaves and only short, long loaves. Oblong bakers can fit longer shapes as well as round and oval loaves. A larger interior may accommodate bigger dough, but the baker itself can be heavier and bulkier to store.
Check handles and loaded weight
Side handles can help when moving a baker into or out of the oven. A lid handle makes it easier to uncover the loaf near the end of baking. Check how you will grip both pieces with oven mitts, and think about the combined challenge of the cookware’s weight and a hot, loaded vessel.

Apply a thin layer of cooking oil regularly and store in a cool, dry place. With proper maintenance, the cast iron develops a natural non-stick patina.
Can a Dutch oven replace a bread cloche?
Yes. A Dutch oven can trap heat and steam around dough in much the same way, so it is a practical option if you already own one or want general-purpose cookware. Its deeper sides can make transferring shaped dough awkward; parchment can help lower the dough into the pot. A cloche’s flatter base and domed lid provide more direct access to the baking surface. The Lodge pick also illustrates the overlap: it is a double Dutch oven that can be arranged for cloche-style baking.
Preheating and safe use
Instructions differ by manufacturer. Some makers recommend preheating the baker for a darker, crunchier loaf; others advise starting with the baker at room temperature to avoid an overdone base. Do not place a chilled cloche directly into a hot oven unless its manufacturer explicitly permits it: a sudden temperature change can cause thermal shock and damage cookware. Use the product-specific directions for preheating, handling and care.
If you are considering the King Arthur cloche
Good Housekeeping included the King Arthur Baking Company Cloche Bread Baker with Handle as its fifth, most-stylish pick, rather than one of the four products above. Its testers reported a crisp crust, but also uneven browning and more sticking than with the other cloches in that comparison. The publication suggests parchment for easier release. King Arthur describes the baker as porous clay stoneware with a lid intended to trap steam; its product tips recommend oiling and adding a thin layer of cornmeal or semolina. See the King Arthur product page and baking tips.
