Which baking tools should you buy first?
For a new home baker, the most useful first purchases are tools that help measure ingredients, mix reliably, and bake in the right pan. A scale and an oven thermometer address two variables that can change how a recipe turns out; bowls, a whisk, and a heat-safe spatula handle everyday preparation.
- Digital kitchen scale: Choose one that displays grams and has a tare function, so you can reset the reading between ingredients and add them to the same bowl. NIST describes a 5 kg capacity as a choice for home cooking, not a universal requirement; consider the size of your usual bowl and ingredient load.
- Oven thermometer: It lets you observe the oven temperature rather than assuming the setting matches the heat inside. It does not recalibrate the appliance.
- Mixing bowls, a whisk, and a heat-safe spatula: These cover mixing, scraping, and folding in many recipes.
- Measuring cups and spoons: Keep them if you use recipes written in volume measures. When a recipe gives ingredient weights, use the scale instead.
- Recipe-matched pans: Buy the shape and size your intended recipes require rather than collecting every kind of bakeware at once.
NIST recommends weighing ingredients when practical because measuring by mass can improve recipe accuracy and repeatability. Its guidance on kitchen measurement is available at NIST’s Metric Kitchen.
Why does a pastry chef emphasize weighing flour?
Flour measured by volume can vary depending on how it is scooped or packed. In pastry, that variation can affect the balance of flour, fat, and liquid. McDowell puts the consequence plainly: “If the flour measurement is even slightly off, it can really change the pastry dough.” The quotation appears in King Arthur Baking’s October 26, 2023 article about pie tools.

When a recipe lists grams or other weights, weigh the ingredient rather than converting it to cups. Put the bowl on the scale, tare it, add the ingredient, then tare again before adding the next. This reduces measuring steps and keeps each amount tied to the recipe’s specified weight.
How should you check your oven and thermometers?
Ovens can differ, including ovens of similar manufacture. A separate oven thermometer gives you a reading of what is happening inside and can help you interpret baking results; it only observes temperature and does not adjust the oven for you. Choose a thermometer for the job: an oven thermometer monitors oven air, a probe thermometer checks food or a mixture, and a candy thermometer is intended for hot sugar work. They are not interchangeable in every application. NIST also describes checking a cooking thermometer in boiling water, which is 100 °C at sea level; account for the difference if your elevation changes the boiling point.

Material is another consideration, but follow the recipe’s pan directions when provided. Hersheyland’s general guidance is that metal tends to heat more quickly and evenly than glass; this is not a guarantee for every recipe or pan.

Bench scraper or bench knife
A bench tool can handle chilled butter, help make straight dough edges, and clear flour from a work surface. It is a practical addition for pie and pastry work, but not essential for every kind of baking.
Rolling pin
A rolling pin is useful for pie crust, cookies, and other rolled doughs. Choose by comfort and handling preference: McDowell favors a French pin for maneuvering dough and also uses a heavy-handled pin when making many pies.

Pastry blender
This tool cuts cold fat into flour. It can be especially helpful if your hands run warm or you are working in a warm location; other bakers may find hand technique sufficient.
Cooling rack
A rack allows baked goods to cool with air circulating around them. Add one if your recipes and kitchen workflow would benefit from moving items off hot pans.
Piping bags and tips
These are for filling, decorating, or shaping mixtures through a nozzle. They are useful for projects that require piping, not a general requirement for a beginner.
Candy thermometer
Buy one when you plan to make candy or other sugar preparations that require monitoring hot syrup. An oven thermometer cannot do this job.

- Save decorating and candy tools for those projects: Piping equipment and a candy thermometer have clear uses, but they need not be in the first shopping basket.
