The Best Pressure Canners and How to Use One Safely

Choose a pressure canner by its capacity, gauge, burner fit, condition, and parts support. Then use a tested recipe and the model’s manual for safe processing.

There is no single pressure canner model established as best for every kitchen. Choose a stovetop pressure canner that holds at least four quart jars, suits your burner, has a usable gauge and safety features, and still has a correct manual and compatible replacement parts. For safe canning, follow a current tested recipe and the canner manufacturer’s directions exactly.

Why pressure canning matters

Pressure canning is the only recommended method for preserving low-acid foods at home. These include fresh vegetables, meat, poultry, fish, seafood, and some tomatoes. Low-acid foods are common sources of home-canning botulism, so improvising processing methods or times is unsafe. The CDC’s guidance is to carefully follow safe home-canning instructions: CDC: Home-Canned Foods.

How to choose a pressure canner

Compare the canner as a complete piece of equipment, not just by its advertised capacity or price. The National Center for Home Food Preservation (NCHFP) recommends a canner large enough to hold at least four quart jars for USDA processes; small pressure saucepans are not recommended for home canning. Its guidance does not identify a universally best model: NCHFP: Using Pressure Canners.

Capacity and jar arrangement

Check the usable jar capacity for the type of jars and rack arrangement you expect to use. The four-quart minimum is a threshold for USDA processes, not a guarantee that every recipe’s batch will fit. Confirm the manufacturer’s capacity instructions and that jars sit upright without crowding or obstructing the canner’s operation.

Dial gauge or weighted gauge

A dial-gauge canner displays pressure on a dial. It gives a numeric reading, but the gauge must be checked for accuracy at least once a year. Follow local extension guidance and the manufacturer’s instructions for testing; University of Georgia Cooperative Extension explains the annual check and operating procedure at UGA Extension: Canning 101.

A weighted-gauge canner uses a weight on the vent to regulate pressure. Its rocking or jiggling pattern is specific to the manufacturer, so learn the correct pattern from that model’s manual. A counterweight that seals a dial-gauge canner’s vent does not make it a weighted-gauge canner. Some canners have both gauges; NCHFP describes using the weighted gauge as the primary pressure control and the dial as a reference.

For either type, use the pressure specified by the tested recipe and adjust it for your elevation. Do not assume a dial’s displayed value, a weight’s motion, or a familiar setting substitutes for the recipe’s requirement.

Stove and burner compatibility

Confirm that the canner is approved for your type of stove and that its base fits the burner as the manufacturer requires. A heavy, oversized canner may be unsuitable for some cooktops. Check the manual for burner-size, heat-source, and handling restrictions before buying or using it.

Condition, safety features, and parts

Inspect the lid, vent, gasket or sealing ring, safety plug, rack, and other model-specific components. Follow the manufacturer’s instructions for cleaning, inspection, and replacement; do not operate a canner with damaged or missing parts. NCHFP recommends looking for a UL approval mark and notes that manuals and parts for older or secondhand canners may be difficult to find. Before choosing a used canner, identify its exact model and verify that its manual and compatible replacement parts are available.

Total cost and upkeep

Include required replacement parts and gauge checks in the cost comparison. A dial gauge brings an annual accuracy-check requirement; gaskets, safety components, and other parts may need attention according to the manufacturer. A lower purchase price does not help if you cannot confirm the model’s operating directions or source the correct parts.

How to use a pressure canner safely

Start with the canner’s current manual and a tested recipe from USDA/NCHFP or a reliable extension service. The recipe determines the food preparation, jar size, pack style, processing time, and pressure; elevation affects the required pressure. Do not substitute a pressure cooker or electric multicooker for a pressure canner: the CDC says not to use electric multicookers for low-acid home canning, even when they advertise a canning or steam-canning setting.

  1. Check the recipe and equipment. Confirm that the recipe is tested, applies to the food and jar size you are using, and includes the correct adjustment for your elevation. Inspect and clean the canner, vent, gasket, and other parts as directed by its manufacturer. Verify a dial gauge’s accuracy at least annually.
  2. Prepare the canner and jars as directed. Add the recipe’s specified amount of water and load the jars according to the recipe and canner manual. For ordinary procedures where the recipe gives no different instruction, UGA Extension describes 2–3 inches of water as a starting amount. Do not treat that as a substitute for recipe-specific directions.
  3. Vent the canner. Lock the lid with the vent uncovered. Heat the canner until steam escapes continuously in a visible funnel, then allow continuous steam to vent for 10 minutes before pressurizing. This venting step removes air; it is not the processing period.
  4. Pressurize and start the timer. Close the vent or install the regulator as the manufacturer directs. Once the canner reaches the pressure required by the tested recipe, begin timing. Maintain the recommended pressure throughout the full processing period, following the instructions for your gauge type.
  5. Recover from pressure loss correctly. If pressure falls below the recipe’s required level, restore pressure and restart the entire processing time. Do not count the time spent below the required pressure toward the process.
  6. Cool without forcing the lid. After processing, let the canner depressurize and cool according to its manual. Do not force the lid open; follow the manufacturer’s instructions for when it is safe to remove it.

Pressure canning reaches temperatures in the range of 240–250°F inside jars, according to University of Minnesota Extension: University of Minnesota Extension: Pressure Canning Food. The safe process still depends on the tested recipe’s specified time and pressure, not on temperature estimates or a generic setting.

Keep pressure-processing steps separate from serving advice

The CDC advises boiling certain home-canned foods before eating them: 10 minutes at elevations below 1,000 feet, plus 1 minute for each additional 1,000 feet. This is a separate food-safety step for specified foods; it does not replace the tested recipe’s pressure, processing time, or altitude adjustment during canning.
