For a classic batch, a standard square pan is the simplest starting point; choose uncoated aluminum if you prefer that finish, or a specialty pan for bite-size portions or a lidded format. The picks below come from Saveur’s 2022 brownie-pan guide, not from new head-to-head testing, so treat them as a useful shortlist rather than a current, independently verified ranking.

How to choose the right size and material
Start with the recipe’s pan dimensions
Use the pan size specified by the recipe whenever possible. A smaller footprint can make a thicker brownie and may call for a longer bake, but the result depends on the recipe. Betty Crocker says most of its brownies use a 13-by-9-by-2-inch pan; for its package directions, moving to a 9-by-9-by-2-inch pan makes thicker brownies and calls for a longer bake. Choose metal or glass for the result you want
For its own brownies, Betty Crocker Kitchens recommends medium- to heavyweight uncoated aluminum or gray-coated metal. Its FAQ says dark nonstick metal can make edges chewier and may need a shorter baking time; glass can produce chewier edges with a fudgier center. Use those points as a starting guide, not a guarantee for every recipe or oven.
Coating also affects handling. A nonstick finish can make release easier, while an uncoated pan benefits from a reliable lining and greasing. Ceramic is not compared in the cited sources, so these recommendations do not establish how it performs against metal or glass.

Make removal easier
A parchment sling is useful when you want to lift a whole batch out before cutting. King Arthur recommends fitting parchment in its cake and brownie pan before adding batter; the same general approach can help with a square pan, especially an uncoated one. When a specialty pan makes sense
Bites instead of squares
A cavity pan portions brownies individually rather than baking one slab to cut afterward. Nordic Ware’s Brownie Bites Pan has sixteen cavities, according to its product page. The detailed wells need careful preparation: Nordic Ware recommends greasing and flouring them or using baking spray that contains flour. Chewy edges on every portion
An edge-style pan is aimed at people who want more outside edges, which are often the chewiest parts of a batch. Epicurious includes this as a preference-driven option, rather than a replacement for a standard pan.
