“Blooming” or “proofing” dry yeast in liquid is different from letting dough rise. Blooming checks or rehydrates the yeast before mixing. Dough proofing is the later rise after the dough has been mixed and kneaded. A recipe’s rise schedule refers to the dough, not the five-minute yeast bloom described in Fleischmann’s substitution directions.

What temperature should water be for active dry yeast?

Fleischmann’s Yeast 101 says, “100°–110°F is the ideal temperature for Active Dry Yeast.” This is Fleischmann’s guidance for its active dry yeast, not a universal rule for every brand. Use a thermometer if you need to check the liquid temperature, and follow your product’s package directions.

Can I substitute active dry yeast for instant yeast?

  • Replacing Fleischmann’s RapidRise with active dry yeast: use 25% more active dry yeast, bloom it for five minutes in 100°–110°F liquid, and add 20 minutes to the rise time.
  • Replacing Fleischmann’s active dry yeast with RapidRise: use an equal amount of RapidRise, mix it with the dry ingredients, warm the wet ingredients to 120°–130°F, and let the dough rest for 10 minutes after kneading instead of giving it the first rise.

How long does active dry yeast last after opening?

Use the package date as your main guide. Fleischmann’s says unopened dry yeast can generally last around two years, but recommends using it by the date printed on the package. The USDA baker’s yeast specification advises cool, dry storage and says properly stored, unopened yeast is reliable when used by its expiration date. How can I tell if my yeast is still active?

If you are unsure whether Fleischmann’s active dry yeast is still viable, its Yeast 101 describes this practical activity check:

  1. Combine ¼ cup warm water at 100°–110°F, the yeast, and 1 teaspoon sugar.
  2. Wait 10 minutes.
  3. Look for bubbles or foam and an increase to about twice the original size. Fleischmann’s says this indicates living active yeast.
