It is not simply another name for all farming before synthetic inputs existed. In the United States today, “organic” is a regulated production and labeling standard; acreage and sales figures show the movement’s scale, but do not by themselves prove environmental or health effects.
What is the history of organic farming?
For most of agriculture’s history, farmers depended on ecological processes: soil organic matter, crop residues, manure, rainfall, diverse crops and ways of limiting pests. Those practices provide important context, but older farms were not necessarily “organic” under modern certification rules. The organized organic movement took shape much later, as some farmers and thinkers challenged agricultural changes of the late nineteenth and early twentieth centuries. Rodale Institute’s overview describes the long history of ecological farming while noting that it is not exhaustive: History of Organic Farming and Certification.
IFOAM – Organics International calls the pioneers’ period Organic 1.0: a response to the direction agriculture was taking. A defining idea was to build fertility by feeding the soil. USDA’s historical account describes European humus-farming movements from the 1920s through the 1950s, which emphasized soil organic matter and often used mixed farms, livestock, food and feed crops, and green manures. IFOAM’s account of the movement’s philosophy includes the principle, “The health of soil, plant, animal and man is one and indivisible.” This expresses a founding ideal, not a measured scientific result. IFOAM’s history of the organic movement and the USDA’s Organic Livestock Producers Guide trace these roots.
What are the major milestones in organic farming?

What does “organic” mean under U.S. rules?
In the United States, “organic” is a labeling term for food and other agricultural products made using approved methods. Compliance is verified by a USDA-accredited certifying agent before a product can carry the USDA organic label. The federal framework covers production and handling, prohibited practices, and a National List of allowed and prohibited substances. These rules are specific to the U.S.; other countries may have different certification requirements. See USDA’s Organic Standards and Organic Regulations.

Crop production requirements
For crops, USDA standards require land to go three years without prohibited substances before harvest. Farmers manage soil fertility and crop nutrients through practices such as tillage, cultivation, crop rotations, cover crops and waste materials, along with allowed inputs. Pest, weed and disease control relies primarily on physical, mechanical and biological practices. USDA’s standards overview describes these requirements.
Organic does not mean “no pesticides”
Organic certification does not categorically prohibit every pesticide. The U.S. Environmental Protection Agency explains that pesticides from natural sources may be used when the ingredients and uses meet applicable organic criteria. The label means the product meets the relevant production standard, not that no pest-control substance was used. EPA: Organic Farming.

How large is U.S. organic farming, and what do the figures show?
The figures below describe different measures and sources. USDA Economic Research Service (ERS) reports the 2011–2021 comparisons from USDA National Agricultural Statistics Service surveys. Its 2025 acreage figure is based on Argus data, and its 2025 sales estimate comes from the Organic Trade Association; those figures should not be treated as one continuous survey series.

What can—and can’t—be concluded about organic farming’s impact?
“Impact” is not one outcome. A claim about soil carbon cannot stand in for one about crop yield or human health, and a result in one crop or region may not apply elsewhere. A sound comparison needs to identify the standard and jurisdiction, the outcome measured, the crop and production system, the location and period, and the study design and time horizon. Costs, price premiums, consumer prices and who receives any benefits are distinct questions too.
The acreage, operation and sales figures above show expansion and, in the later acreage estimate, a decline. They do not supply a causal comparison with conventional farming. The sources cited here do not establish one universal effect size or ranking across environmental, production and health outcomes. For any particular claim, look for a comparative study that names its location, period, system and measured outcome rather than inferring effects from the organic label or market growth.
