Which Type of Cookware Is Safest to Use?

Reputable stainless steel is the strongest everyday default, while properly used PTFE is acceptable. Ceramic and glass require checks, and unverified imported aluminum or brass cookware can pose lead risks.

For most households, a reputable stainless-steel pan is the best general-purpose safety choice: it is uncoated, durable and suitable for everyday stovetop cooking. Properly used PTFE nonstick cookware is also considered acceptable by the U.S. Food and Drug Administration (FDA) and Germany’s Federal Institute for Risk Assessment (BfR). The cookware to avoid is unverified imported aluminum, brass or aluminum-alloy ware linked to potential lead leaching. Ceramic and glass can be suitable, but their safety depends on the glaze, manufacture, condition and intended use.

There is no single safest material for every use

Cookware safety depends on more than the name on the label. The relevant variables include:

  • Whether the surface is coated, glazed or bare.
  • The food being cooked, especially its acidity.
  • Temperature and cooking time.
  • Whether the pan is scratched, chipped, cracked or otherwise damaged.
  • How reliably the manufacturer identifies the product and its food-contact compliance.

Migration of substances into food is therefore a use-and-product question, not a simple ranking of materials. Health Canada summarizes the principle this way: “Some factors that affect the transfer of substances into food include the type of food, the type of material and the conditions of use.”

How common cookware materials compare

Glass Safety is conditional on the product and use conditions; no universal comparative migration result was stated in the cited guidance. Follow the maker’s temperature limits and thermal-shock instructions. Use cookware intended and labeled for food contact, not decorative glassware.
Cast iron The American College of Obstetricians and Gynecologists (ACOG) lists cast iron among options without a nonstick coating. A comparative migration or risk figure was not stated in the cited guidance. Use according to the manufacturer’s care and temperature instructions. Buy from a traceable maker and keep the surface in good condition.
Unverified imported aluminum, brass or aluminum-alloy cookware FDA testing found potential lead leaching under use-simulating conditions in certain products. Do not use an affected or unverifiable product. Avoid ware sold under names such as Hindalium, Hindolium, Indalium or Indolium unless its food-contact safety and manufacturer are verifiable.

Why stainless steel is the practical everyday default

Stainless steel has no deliberately applied nonstick coating, tolerates routine stovetop cooking and is generally durable. That combination makes a reputable stainless-steel skillet or set a sensible default when you want one material for frequent cooking.

“Uncoated” does not mean “zero migration.” The amount transferred, if any, can depend on the steel’s construction and on the food’s acidity, the cooking temperature and the length of cooking. The available official guidance does not establish a single number that applies to every stainless-steel pan or recipe.

When buying, prioritize a manufacturer that can be identified, a product clearly intended for food contact and care instructions that match how you cook. A traceable product is more meaningful than a vague claim that a pan is “chemical-free.”

Is PTFE nonstick safe?

Modern PTFE nonstick cookware is considered acceptable when used as intended. The FDA says that some PFAS are approved for nonstick coatings and that the coating is polymerized and tightly bound. Its consumer guidance states: “Studies show that this coating contains a negligible amount of PFAS capable of migrating to food.” BfR likewise concludes that PTFE cookware used under normal foreseeable conditions should not release hazardous quantities into food.

The practical concern is misuse rather than ordinary contact with a properly made coating. Keep the pan below the manufacturer’s stated heat limit, do not preheat it empty and use only the utensils and cleaning methods specified by the maker. A seriously scratched, peeling or otherwise damaged coating should be replaced rather than kept in service.

“PFOA-free,” “natural” or similar wording is not a complete safety assessment. Check what the actual cooking surface is, who made it and which food-contact and temperature instructions apply.

Are ceramic pans and glass cookware automatically safer?

No. Ceramic and glass are conditional choices, not automatic safety winners.

Ceramic cookware

ACOG lists ceramic among options without a nonstick coating, but it also warns that ceramic materials can contain lead. Lead risk depends on the formulation, glaze, manufacturing controls and use conditions. Do not cook with decorative ceramic pieces, and stop using cookware with a damaged glaze or visible chips. Follow the product’s temperature and care instructions.

Glass cookware

Glass can be an appropriate food-contact material when the product is made and labeled for cooking. The cited guidance does not establish one universal migration or safety result for all glass cookware. Use only the temperatures and heating methods allowed by the manufacturer, and avoid damaged pieces or sudden temperature changes if the instructions prohibit them.

Which cookware should you avoid because of lead?

Be especially cautious with unverified imported aluminum, brass and aluminum-alloy cookware. FDA testing identified potential lead leaching under conditions designed to simulate use in certain products. The agency’s December 12, 2024, letter to retailers and distributors states: “There is no known safe level of exposure to lead.” FDA’s lead-in-food-and-foodwares page recorded the cookware warning in an update dated January 6, 2025.

Products may be sold under names including Hindalium, Hindolium, Indalium or Indolium. A metal name alone does not prove that a pan is affected, but an unknown maker, missing food-contact labeling or unverifiable origin is a reason not to use it. If you already own such a pan and cannot establish its manufacturer and food-contact safety, replace it with a traceable product rather than testing it by cooking with it.

How to choose a safer pan in the store

  1. Identify the actual cooking surface. Determine whether it is bare stainless steel, PTFE, ceramic, glass, cast iron or an alloy rather than relying on front-label phrases such as “natural.”
  2. Check the manufacturer. Look for a company name, contact information and documentation that identifies the product as intended for food contact.
  3. Read heat and utensil instructions. This is essential for PTFE, ceramic and glass, and it also provides the care limits for uncoated cookware.
  4. Inspect the pan before use. Reject cracked glass, chipped ceramic, badly damaged coatings and products with uncertain construction.
  5. Match the pan to the job. Choose an uncoated stainless-steel pan for a durable everyday option; choose PTFE when easy release is the priority and you can follow its heat and utensil limits.
  6. Keep traceability after purchase. Retain the packaging or product information so you can identify the maker and instructions if a safety notice is issued.

Safe-use checklist by material

  • Stainless steel: Use it for routine stovetop cooking, and remember that food acidity, heat, time and construction can affect migration.
  • PTFE: Never deliberately overheat an empty pan; stay within the maker’s temperature limit; use approved utensils; replace serious coating damage.
  • Ceramic: Use only food-contact cookware, not decorative ware; do not cook with chipped or damaged glaze; follow temperature limits.
  • Glass: Follow the manufacturer’s heating and thermal-shock directions; do not use cracked or damaged pieces.
  • Any material: Retire cookware when its condition or origin makes its food-contact safety uncertain.

A practical decision for most kitchens

If you want one durable, uncoated option, buy a traceable stainless-steel skillet or cookware set. If you need easy release for foods such as eggs, a reputable PTFE pan is a reasonable choice when you observe its heat and care instructions. Choose ceramic or glass only when the product is clearly intended for cooking, its condition is sound and the manufacturer’s directions fit your use. Avoid cookware whose origin, alloy composition or food-contact documentation cannot be verified—particularly imported aluminum, brass and aluminum-alloy products associated with lead-leaching warnings.
