Five good examples are milkweed, purple coneflower, false indigo, black-eyed Susan and wild columbine. This is about ending seed dormancy—not making every plant grow better in cold soil. Requirements vary by species, so check the seed packet and local growing advice before sowing.
What cold stratification does
Cold stratification exposes seeds to cold conditions, often with moisture, to ease or end dormancy so they can germinate when conditions become favorable. In nature, winter provides that sequence: temperature changes help trigger germination later. The necessary exposure depends on the species, not on a universal calendar rule. University of Illinois Extension explains natural stratification and species-specific needs.

For cold-moist stratification, University of Maryland Extension describes winter-like temperatures around 40°F. Its native-seed guidance lists 60–90 days for black-eyed Susan and wild columbine; that duration should not be assumed for every plant or seed lot. See Maryland Extension’s species guidance.
Five plants whose seeds benefit from winter cold
| Plant | What the guidance establishes | Practical note |
|---|---|---|
| Milkweed | Illinois Extension includes many milkweed species among popular plants that require stratification. | Milkweed is a genus; confirm the needs of the particular species and seed lot. |
| Purple coneflower | Illinois Extension names it as a popular plant requiring stratification. | Follow packet directions for the cultivar or species you have. |
| False indigo | Illinois Extension names it as a popular plant requiring stratification. | Use species-specific instructions rather than assuming a standard treatment. |
| Black-eyed Susan | Maryland Extension lists Rudbeckia hirta for 60–90 days of cold-moist stratification. | The listed duration applies to this cited species guidance, not all Rudbeckia. |
| Wild columbine | Maryland Extension lists Aquilegia canadensis for 60–90 days of cold-moist stratification; Vermont Extension also notes columbine among self-seeding perennials that benefit from cold winters. | Check the exact columbine species and seed instructions. |
The plant examples are drawn from Illinois Extension, Maryland Extension and University of Vermont Extension. They are examples, not a guarantee that every cultivar or packet needs the same treatment.

Choose outdoor winter sowing or refrigerator stratification
Outdoor winter sowing
Winter sowing lets outdoor conditions provide cold exposure. A clear, clean recycled jug can act as a small greenhouse: make drainage holes and provide ventilation, sow according to the packet, and set it outdoors in a sheltered spot. The container protects seeds and emerging seedlings while still allowing air and water exchange. Monitor it as temperatures rise so seedlings do not overheat or dry out. Cornell Cooperative Extension describes reused jugs as mini greenhouses and says the method needs no special equipment; Penn State Extension also describes outdoor containers carrying seeds through winter until emergence. Cornell’s winter-sowing guide and Penn State’s guide provide further details.
Refrigerator stratification
A refrigerator can substitute for outdoor winter conditions for some seeds when the packet or species-specific guidance calls for it. Keep the seed in the prescribed cold-moist conditions for the correct duration; Maryland Extension advises using a refrigerator rather than a freezer. Do not apply its 60–90-day examples to other species without checking their directions.

Read the seed packet for clues
Winter-sowing candidates may be identified by phrases such as “pre-chilling,” “requires stratification,” “sow outdoors in late autumn or early winter,” “self-sows,” or “seedlings can withstand frost.” Penn State Extension recommends using these clues when selecting seeds. Regional extension advice matters too: a sowing date that works in one climate may not suit another.

Cold-tolerant vegetables are a different case
Some vegetables can be sown in cool weather or tolerate frost, but that does not mean their seeds require cold stratification. Vermont Extension’s fall-planting guidance includes beets, kale, lettuce, spinach, carrots and leeks as frost-tolerant crops. These are examples of cool-season sowing, not evidence that each crop needs a dormancy-breaking cold treatment. See the regional Vermont guidance.

Conversely, sowing warm-season seeds too early into cold, wet soil can cause problems. Cornell notes that tomatoes need warm soil to germinate and may rot if left in moist conditions too long. Use local planting guidance and packet instructions rather than treating cold sowing as a universal advantage. Cornell Cooperative Extension’s winter-sowing guide discusses the distinction.
