Tomatoes most often stay green because temperatures are too hot, the fruit has not reached mature-green stage, or cold has slowed ripening. Tomato pigments develop best in moderate conditions—roughly 68–77°F (20–25°C). Sustained heat above about 85°F, and in some guidance 85–90°F, can slow or stop the production of lycopene and carotene. If a full-sized tomato has begun to lighten or blush, you can usually finish it indoors; a small, dark-green, still-growing tomato may not ripen normally after picking.
How tomato ripening works
A tomato generally needs six to eight weeks from pollination to full maturity, although cultivar and weather change that timetable. As a fruit reaches mature-green stage, its deep green color lightens and it becomes capable of completing ripening away from the plant. The first blush is an even stronger indication that harvesting will succeed.
Mature-green versus immature-green fruit
- Mature-green: full-sized, lighter green rather than deep green, often with a glossy or slightly whitish cast. It can usually ripen after harvest.
- Blushing: any definite pink, orange or red coloration. This fruit is ready for indoor finishing, particularly during a heat wave or before frost.
- Immature-green: still small, hard and actively enlarging. It may remain poor in color, flavor and texture if picked too early.
Temperature is usually the main reason
University of Illinois Extension identifies 68–77°F as the optimum range for tomato ripening. Cornell guidance places the best range near 70–75°F and reports that sustained temperatures above roughly 85–90°F can significantly slow or halt ripening. Illinois also notes that temperatures above 85°F hinder production of lycopene and carotene, the pigments responsible for typical red and orange color.

This is a temperature effect, not proof that the plant needs more fertilizer. Ripening often resumes toward normal when temperatures moderate, provided the plant and fruit are otherwise healthy.

Other conditions that delay or spoil color
Cold nights and refrigeration
Chilling temperatures retard ripening and can produce abnormal color, bland flavor and poor texture. University postharvest guidance from UC Davis and Florida IFAS describes risks below about 50–55°F, depending on exposure time and conditions. A refrigerator is therefore the wrong place for green or partly ripe tomatoes.
Uneven nutrient uptake
Illinois Extension lists low potassium uptake as a possible contributor to uneven ripening, including yellow shoulders or internal whitening. Uptake can be affected by excess water and low light even when a soil test shows adequate potassium. Because weather and uptake conditions are common causes, do not add potassium or other fertilizer blindly; test the soil or obtain local diagnostic advice before correcting a suspected deficiency.

Too much direct sun or leaf removal
Tomatoes do not need direct sunlight on the fruit to ripen. Cornell notes that sunlit fruit can heat enough to inhibit pigment synthesis, and Illinois Extension advises against stripping leaves as a ripening treatment. Maintain healthy foliage and avoid exposing fruit simply to make it redder.
Should you leave tomatoes on the vine?

How to ripen picked tomatoes successfully
- Sort by maturity. Set aside full-sized mature-green and blushing tomatoes. Do not expect the same result from undersized, hard, dark-green fruit.
- Keep them at moderate room temperature. Aim for about 70–75°F for indoor finishing. Choose a dry, ventilated location away from direct sunlight and heat-producing appliances.
- Use a paper bag only if useful. Put tomatoes stem-end up in a plain paper bag, punch several ventilation holes, and fold the top loosely. The bag helps retain the fruit’s naturally produced ethylene; it is optional, not a special product requirement.
- Inspect every day. Remove fruit that softens excessively, leaks or shows mold, and turn or separate tomatoes as needed. Illinois Extension estimates one to five days in a paper bag, depending on how underripe the fruit is.
- For slower ripening before frost, wrap individually. Illinois Extension recommends wrapping mature-green tomatoes in paper and storing them at 60–65°F. Check them routinely and bring any beginning to color into the normal indoor finishing area.
What not to do
- Do not refrigerate green or ripening tomatoes to make them turn red; cold slows ripening and can permanently reduce quality.
- Do not place fruit in direct sun or strip the plant’s leaves to “force” color; heating the fruit can inhibit pigment development.
- Do not pour on fertilizer as a quick fix. Added fertilizer will not rapidly ripen fruit, and potassium should be addressed only when a deficiency or uptake problem is supported by evidence.
- Do not handle bottled ethylene gas at home. Commercial facilities use controlled temperature, humidity, airflow and ethylene systems, and Florida IFAS warns that ethylene is combustible above 2.7% concentration.
A quick diagnosis checklist
- Fruit still tiny and deep green? It is probably immature; give it time on the vine.
- Full-sized fruit during days above 85°F? Heat is the leading suspect; harvest at first color and finish indoors.
- Fruit exposed to cold storage or repeated cold nights? Move it to a moderate, stable indoor location and expect possible quality loss.
- Yellow shoulders, internal white tissue or patchy color? Weather, light, water and potassium uptake may all contribute; avoid diagnosing from symptoms alone.
- Fruit has begun blushing? It is a good candidate for indoor ripening without direct sunlight.
When a tomato may never turn properly red
An immature fruit picked too early may fail to develop normal color and flavor. Chilling injury can also leave fruit with abnormal color or texture even after it warms. Finally, varieties bred to ripen yellow, orange, pink, striped or other colors will not become the classic deep red described here; judge ripeness by the cultivar’s expected mature color, softness and aroma.

For ordinary red varieties, however, mature-green or blushing fruit usually has a practical path to ripening: avoid temperature extremes, keep it out of the refrigerator and allow time at a moderate indoor temperature.
