Pick a tomato when it has reached the mature color expected for its variety and gives slightly under gentle pressure while remaining firm. A tomato does not have to be red: yellow, orange, pink, purple, striped and green-fruited cultivars are ripe when they reach their own finished color. Harvest earlier at the color-break or mature-green stage when heat, cracking, pests or frost make waiting risky.
The three signs of a ready tomato
1. Variety-specific color
Use the seed packet or cultivar description to learn the finished color. Look for an even, developed version of that color rather than assuming every tomato should turn red. In very hot weather, temperatures above 90°F can inhibit the red pigments, so a red variety may turn yellow-orange before it can deepen to red.
2. Slight give, not softness
A ripe tomato should yield slightly to gentle pressure. Nebraska Extension describes the ideal harvest as fully colored but still firm; Iowa State describes ripe fruit as slightly soft rather than hard. Do not squeeze repeatedly or firmly, because pressure bruises the flesh.

Cracks, insect damage, prolonged heat and an approaching frost can outweigh the benefit of waiting for perfect color on the vine. Check plants daily or every other day during peak production. If color has started, you can pick and finish ripening indoors. Pick all usable fruit before a killing frost.

Harvest cues by tomato type

The maturity cue for each fruit stays the same regardless of whether the plant is determinate or indeterminate; the difference is how concentrated your harvest becomes.
Choosing a harvest stage
Fully ripe on the plant
Pick at full mature color with slight give when you want to eat the tomato promptly. This is the simplest choice when weather is moderate and the fruit is not at risk of cracking, pests or frost. No universal flavor percentage or time-based advantage has been established for vine-ripened versus indoor-ripened home-garden fruit, so judge by the fruit and your conditions rather than a promised number of days.

Color-break or breaker stage
When the first mature color appears, picking can protect fruit from splitting, animals and heat-related softening. Place it indoors to finish. This is a practical compromise, not a requirement for every garden.

Mature green is a specific developmental stage, not any tomato that happens to be green. University of Alaska Fairbanks describes mature-green fruit as nearly full-sized, with tougher skin and no pink color, and says it yields more readily to slight pressure. When cut, the seed gel should be jellylike and the seeds should slip aside rather than being sliced. Green fruit with soft white seeds and no jellylike pulp is too immature to ripen reliably and may shrivel with poor color and texture.

Pick mature-green tomatoes before frost kills the vines. For short-term holding, Alaska Extension recommends 55–60°F, moderate humidity and good air circulation.
How to finish ripening picked tomatoes
Room-temperature method
- Place tomatoes stem-end up in a perforated paper bag.
- Fold the top of the bag closed.
- Keep it at ordinary indoor temperature and check the fruit daily.
Light is not needed to ripen tomatoes. Remove fruit that develops leaking, mold or a bad smell so it does not spoil nearby tomatoes.

Temperature choices
Guidance varies with the goal. Alaska Extension gives 65–70°F as the fastest ripening range. UC Davis identifies 68°F as an optimum for sensory and nutritive quality and reports that off-vine tomatoes held above 77°F tend to become more yellow and softer. Illinois Extension suggests 70–75°F for indoor ripening after hot-weather harvest. Cooler conditions around 60°F can preserve firmness and reduce decay, but ripening takes longer. The time required depends on how mature the fruit was when picked and on its storage conditions.

- Support the tomato with one hand.
- Cut the stem with clean scissors or a sharp knife, leaving a small piece of stem attached, as Nebraska Extension recommends.
- Set fruit gently into a shallow container rather than dropping or piling it deeply.
- Handle cracked or bruised fruit separately and use it promptly.
Commercial practices differ by market: Maryland production guidance notes that stems may be removed for standard slicing, cherry and plum tomatoes, while cluster tomatoes are cut with the whole truss. Home gardeners do not need to copy those market-specific methods. Small garden snips or pruning scissors are optional conveniences; they do not improve ripeness or flavor.

What to do when conditions change
Heat above 90°F
Expect red color development to slow. Check firmness and the appearance of mature color instead of waiting for a deeper red that heat may prevent. Pick fruit that has begun coloring and ripen it indoors if it starts to soften.
Cracking, pests or animals
Harvest at color-break before damage spreads. Separate damaged fruit and use sound tomatoes first.
Frost in the forecast
Bring in fruit that is fully grown and mature green, breaker or more advanced. Do not rely on tiny, hard green tomatoes to ripen well.
Large batch of paste tomatoes
Because paste and plum varieties often set a substantial crop over a shorter period, collecting fruit at its mature color can make sauce or other processing more efficient. Follow a tested, method-specific food-preservation recipe for any canning; harvest timing alone does not establish safe processing instructions.
A quick decision checklist
- Color: Is the fruit the mature color for its cultivar, or has it just begun that color?
- Feel: Does it give slightly under gentle pressure without feeling mushy?
- Purpose: Will you eat it now, process a batch, or ripen it indoors?
- Risk: Are heat, cracking, pests or frost likely to cause a greater loss if you wait?
- Green stage: If harvesting green, does it meet mature-green signs, including jellylike seed gel?
Why commercial harvest stages can be confusing
Commercial tomatoes may be labeled mature green, breaker, semi-ripe or fully ripe. Maryland Extension reports that long-distance shipments commonly use mature-green fruit, local wholesale may use breaker fruit and direct-market tomatoes are generally harvested ripe. Those stages reflect transport and selling logistics, not a rule that home gardeners must follow. At home, choose the stage that matches the variety, your intended use and the immediate weather risk.
