The right corkscrew depends on how much effort you want to use, how compact the tool must be, whether you need a foil knife, and whether you regularly open old or fragile corks. Liquor.com’s April 17, 2024 roundup, reported by WSET-III sommelier Kate Dingwall after wine-service testing and consultation with other professionals, names nine standouts across waiter’s keys, lever, electric, winged and specialist designs.

The roundup does not declare one design universally best. Its choices reflect different priorities and the reported performance of these specific models.

Choose a waiter’s key for portability and versatility
A waiter’s corkscrew folds into a compact tool and normally combines a foil knife, worm and lever. Wine professionals Richard Vayda and Theo Rutherford both emphasize the format’s portability and reliability. Rutherford says he “always come[s] back to the simple, reliable waiter’s wine key.” Pulltap’s Professional Waiter’s Corkscrew is the roundup’s best overall choice, while True Truetap is the budget pick.

Choose a lever opener when effort matters more than compactness
The OXO Vertical Corkscrew uses a lever mechanism to reduce the force needed to remove a cork. It is a sensible direction for anyone with limited hand strength or who simply prefers a more guided motion. The trade-off is size: a lever opener takes more room than a folding wine key and is less convenient to carry for service or travel. It suits a home user who values powered operation and wine-preservation capability over the small footprint and all-in-one simplicity of a waiter’s key. Confirm the current model contents and compatibility before buying, because product specifications and retailer listings can change.

Choose The Durand for old or fragile corks
The Durand combines two thin prongs with a worm. The prongs grip the cork from the sides while the worm supports extraction, making this specialist tool appropriate for corks that might crumble under a conventional screw. The technique is less intuitive than using a standard key, so expect a learning curve and practice before using it on a valuable bottle.
Choose a winged opener for a familiar tabletop action
The Rabbit Wing Corkscrew raises its two handles as the worm enters the cork; pressing the handles down then lifts the cork. This style can feel straightforward at home, but its upright body occupies more storage space than a folding key.

Choose a premium or decorative model for presentation
Laguiole En Aubrac’s Solid Horn Waiters Corkscrew is the splurge pick for buyers who want a high-end waiter’s key. The Viski Belmont Signature Corkscrew is the style pick for a bar where appearance matters alongside function. Neither choice removes the need to match the worm and leverage to the condition of the cork.
How to open a bottle without breaking the cork
- Cut and remove the foil. Use the opener’s foil knife, if included, and clear the bottle lip so you can see the cork.
- Center the worm. Place the tip in the middle of the cork and keep the shaft straight. An off-center entry can push against the glass or tear the cork.
- Drive the worm in steadily. Insert it deep enough to hold the cork, but do not over-screw; the source specifically warns that excessive insertion can worsen breakage.
- Lift in line with the bottle. Use the hinge or lever gradually and pull straight upward rather than twisting the cork sideways.
- Finish by hand. When most of the cork is free, ease it out slowly to avoid a sudden pop or crumbling at the neck.
If the cork starts to crumble
Stop forcing the opener. Reinsert the worm carefully into the remaining solid section and lift slowly. If fragments fall into the wine, pour through cheesecloth while decanting to catch the pieces. A damaged cork does not by itself indicate that the wine is spoiled.

These are the criteria Dingwall reports assessing—foil-knife sharpness, opener flexibility, worm quality and smoothness—during wine service. Her roundup is a reported expert test, not an independent laboratory comparison, and the products, warranties and retailer details may change.

Vayda describes waiter’s corkscrews as “easily portable and generally very reliable openers,” while Rutherford favors their simple reliability. Those comments explain why the roundup’s overall and budget choices are waiter’s keys, not a claim that every user should choose one. True Brands’ vendor page reproduces a statement from Scott Carney, Dean of Wine Studies at the Institute of Culinary Education, saying he habitually uses a Truetap after opening tens of thousands of bottles; that is vendor-page testimony rather than independently verified testing.
