King Arthur’s Sourdough Sidekick Automates Starter Feeding, Not Bread Baking

King Arthur Baking’s Sourdough Sidekick is a countertop appliance that measures flour and water, mixes an existing sourdough starter, and follows a feeding schedule. It costs $179.95 at King Arthur’s product page at the time of writing. It can take repetitive starter care off your schedule; it cannot make, proof, or bake a loaf for you.

What the Sourdough Sidekick does

Developed with FirstBuild, the Sidekick is an automated sourdough-starter feeder. You put starter in its glass crock, load flour into the hopper and water into the rear reservoir, then choose a feeding mode. The machine dispenses ingredients and mixes them according to its program. It also connects to a mobile app for monitoring and phone alerts, according to King Arthur’s product listing.

That is useful automation, but it is limited to starter maintenance:

You still make the dough and judge when it is ready. The Sidekick is not a bread machine or a substitute for learning how your starter behaves.

How the three modes work

Auto Mode: plan for a future bake

Auto Mode is for people who want a particular amount of starter ready at a particular time. You specify the target quantity and when you need it; the machine uses gradual “micro-feedings” to build toward that target. King Arthur says this can avoid the usual daily-discard routine for up to seven days. Treat that as a way to reduce discard during a planned build, not a promise that you will never have excess starter or discard again.

This mode makes most sense if you bake on a schedule but do not want to keep a large starter going with conventional daily feeds. The machine may maintain a stiffer starter that is mixed regularly, so it may not rise and fall in a jar the way a familiar room-temperature starter does. King Arthur notes that this appearance can be different during Auto Mode; judge the culture in context rather than expecting the same visual cycle as a hand-fed starter.

Ratio Mode: use a familiar feeding ratio

Ratio Mode is aimed at bakers who already have a preferred routine. King Arthur gives examples such as 1:1:1, 1:2:2, and 1:4:4. These ratios mean starter:flour:water by weight. For instance, a 1:2:2 feed uses one part starter, two parts flour, and two parts water.

Custom Mode: set the amounts yourself

Custom Mode offers more control over seed and feed amounts, including for different hydration preferences. It is the closest match for someone who wants the machine to handle measuring and mixing but does not want an automatically chosen formula. The available descriptions do not establish that every possible flour, blend, or feeding method is supported, so check the current use-and-care guide before relying on an unusual ingredient or formula.

Temperature-aware timing is not temperature control

Fermentation speeds up in a warmer kitchen and slows down in a cooler one. King Arthur says the Sidekick reads ambient kitchen temperature and adjusts the timing of its final feeds to help the starter reach the planned readiness time. That is more useful than an unchanging timer, but it is not the same as actively holding the starter at a chosen temperature, nor can it remove every source of variation. Flour, hydration, culture strength, inoculation, and changing room conditions all matter. Treat the schedule as a target and look at the starter before using it.

If temperature is the main problem, a different tool may fit better. The Brod & Taylor Sourdough Home controls starter temperature from 41°F to 122°F in one-degree increments, according to King Arthur’s temperature guide. It does not automatically feed or mix starter. The Sidekick automates dispensing and scheduling; the Sourdough Home manages temperature.

It maintains a culture; it does not instantly create one

The Sidekick is intended to feed or build from an existing sourdough culture, not produce a mature starter instantly from flour and water. A new culture takes time to establish: King Arthur’s starter recipe lists about five days for the process, though actual maturation varies. Start with a healthy culture from a friend, a purchased starter, or one you cultivate separately. King Arthur’s fresh starter is listed separately at $12.95 at the time of writing.

Counter space, setup, and upkeep

The listed dimensions are 8.72 inches deep by 5.65 inches wide by 13.25 inches high. Its countertop footprint is relatively narrow, but check vertical clearance and access to the top hopper and rear water reservoir before choosing a spot. The machine also needs enough room to remove and clean the crock and mixing components.

Calibration is part of the official use-and-care guide. It matters because flour density and how it settles can affect dispensing. Follow the current guide’s instructions for setup, calibration, cleaning, and any flour restrictions. Do not assume that every flour type, coarse grind, or blend will feed reliably: the product descriptions establish automatic flour and water dispensing, but do not document universal compatibility.

Automation also does not mean maintenance-free. You still need to replenish the hopper and reservoir, clean the crock and mixing parts, keep flour dry and free-flowing, and respond if a feed does not go as planned. Dried starter residue can be difficult to remove. Treat the app as a convenience for monitoring and alerts, not as a substitute for checking the appliance and starter. The published product description supports monitoring and alerts; it does not establish that the app can diagnose starter health or guarantee recovery from a failed feed.

What to do if a scheduled feed goes wrong

Start with simple checks: confirm the water and flour are available, and make sure the crock, mixing parts, hopper, and reservoir are seated as directed in the guide. If dispensing seems inaccurate, follow the guide’s calibration instructions. Inspect the culture yourself. If it appears healthy but missed its schedule, you can return to a manual feed using a ratio you know; do not assume an app alert proves the starter is ready. If you see mold or suspect contamination, discard the culture rather than trying to rescue it.

Is it worth $179.95?

King Arthur lists the Sidekick at $179.95; price and availability can change. That is a substantial premium over a jar, scale, and spoon, which can handle the same basic feeding task manually. The appliance’s value is in convenience and schedule management, not a promise of better bread. Consider not only the purchase price but also counter space, cleaning time, flour and water replenishment, and whether the automation would help you bake more consistently.

Lower-cost and different-purpose alternatives

  • Jar, scale, and manual feeding: The lowest-cost, most flexible approach. Weigh flour and water, mix by hand, and adjust feeding to your baking schedule. It requires remembering feeds and managing any discard. King Arthur’s starter recipe is a starting point.
  • Refrigeration between baking sessions: Occasional bakers can often reduce the frequency of room-temperature maintenance by storing starter cold and refreshing it before baking. This still requires manual care, but may make a feeder unnecessary.
  • Temperature control: The Sourdough Home addresses temperature stability rather than automatic feeding. Consider it when inconsistent kitchen temperatures, not the measuring and mixing, are the main obstacle.
  • Fresh starter: A purchased or gifted culture skips the initial establishment period but does not remove the need for ongoing feeding. King Arthur lists its fresh starter at $12.95.

Verdict

The Sourdough Sidekick makes sense for a baker whose real problem is remembering and timing starter feeds. It automates measuring, mixing, and scheduled maintenance, and its Auto Mode can reduce routine discard during a planned build. But it adds cost, counter space, calibration, cleaning, and another appliance to maintain. If you bake occasionally or enjoy feeding by hand, a jar and scale remain a capable alternative. If you buy the Sidekick, buy it for starter-care convenience—not for automatic bread making.
