Yes—you can grow lettuce in winter, either under outdoor protection or indoors. Success depends on your local cold, light and planting calendar: choose a cold-tolerant variety, give plants time to establish before severe weather, and protect outdoor crops when freezes threaten. In the dimmest months, indoor lettuce may need a grow light. If growth slows, harvest usable outer leaves rather than waiting for full heads.
Can I grow lettuce in winter?
Lettuce is a cool-season crop that can tolerate light frost, but heavy frost or prolonged freezing may damage or kill plants. Whether it survives—and whether it keeps growing—depends on the cultivar, how established it is and the conditions around it. A plant that survives winter is not necessarily producing new leaves quickly enough for continuous harvest.
For a winter crop, choose between outdoor growing with a cloche, cold frame, row cover or tunnel, and indoor growing where you can manage light and watering. The right option depends on your winter lows, available space, natural light and whether you want baby leaves, loose leaves or full heads.
When should I plant winter lettuce?
There is no universal sowing date. Use your local frost dates, regional growing advice and the seed packet rather than applying another region’s calendar directly. The UK’s Royal Horticultural Society (RHS) suggests sowing outdoors in early August for early-winter harvest, then covering plants from late September. For spring harvest, it suggests sowing a winter variety such as ‘Winter Density’ in September or October under greenhouse cover, or in mild areas under a cloche or cold frame.

Those dates are UK guidance, not a general calendar. Rutgers’ New Jersey winter-production guide gives September through October as its planting window and notes that cooler soil lengthens the time to harvest. UF/IFAS says planting months depend on where a gardener lives; UC IPM likewise gives different approximate windows across California regions and cautions that climates vary within regions. Check [local extension guidance] or a regional calendar for your area.
Plant early enough for seedlings or transplants to establish before the most severe cold. In Minnesota, Extension describes ideal lettuce conditions as nighttime lows around 50°F and daytime highs up to 68°F. That is Minnesota guidance, not a universal temperature target. Heat and long days can also prompt bolting—flowering before a good harvest—and bitter flavor.

Which lettuce varieties grow in cold weather?
Look for a winter or cold-tolerant variety suited to your area. RHS names ‘Winter Density’ for winter sowing. University of Maryland Extension lists the following cultivars as candidates for overwintering if plants are healthy young transplants, planted around October 15 and protected:
- Black Seeded Simpson
- Waldmann’s Dark Green
- Salad Bowl
- Winter Density
- Brune D’Hiver
- Winter Marvel
- Arctic King
That October timing and cultivar list are Maryland-specific guidance, not a guarantee for other climates. Rutgers reports that Bibb and romaine types grew well in recent variety trials; treat those results as regional rather than universal. Check local recommendations and the seed packet for the variety’s spacing and days to maturity.

How do I protect lettuce from frost outdoors?
Use a cover suited to your site: a cloche over a few plants, a cold frame over a bed, or floating row cover or a high tunnel for a larger planting. Covers can buffer cold, but they do not make every outdoor bed warm enough for active growth through winter, especially where freezes are harsh or prolonged.
Rutgers describes row covers inside high tunnels as added insulation, but warns that they reduce airflow and light and can raise foliar disease risk. Ventilate or remove protection when conditions call for it, and avoid leaving plants in stagnant, damp air. A cover’s job is to moderate conditions, not to keep foliage continually wet and enclosed.

Can lettuce grow indoors in winter?
Yes. Illinois Extension says lettuce can be grown indoors in winter, while identifying short days and humidity as constraints. Loose-leaf types are a practical choice because you can pick leaves as they become usable without waiting for a full head.

A bright window may work, but if winter daylight there is inadequate, add a suitable grow light. Use a container with drainage holes and a good potting mix; standing water around shallow roots can undermine healthy growth. Illinois Extension gives about four weeks to harvest for loose-leaf lettuce under its guidance, but actual timing varies with light and growing conditions.

How to plant and care for a winter lettuce crop
- Choose a method and cultivar. Match a locally suitable winter or cold-tolerant variety to your climate, available protection or indoor light, and the harvest you want.
- Check the planting window. Follow local planting advice and the packet’s instructions. Sow or transplant while there is enough time for plants to establish before severe cold.
- Prepare the growing medium. Outdoors, use fertile soil that holds moisture but drains well. Indoors, use potting mix in a container with drainage holes. Lettuce has shallow roots.
- Give plants room. Follow the variety’s spacing guidance and allow for whether you are growing baby leaves or heads. RHS advises thinning heading types to prevent crowding that can stop a firm head from forming.
- Water steadily, not excessively. Keep the soil moist without waterlogging. Where possible, keep leaves dry and provide airflow, especially under covers, to reduce foliar disease risk.
- Adjust protection or light. Cover outdoor plants when cold threatens, then ventilate or remove covers as conditions warrant. Indoors, move plants to strong light or supplement a dim window with a grow light.
- Harvest to suit the weather. Pick baby or outer leaves once they reach a usable size, leaving the growing center where possible. Full heads take longer and depend more on favorable conditions.
What harvest timing should I expect?
Harvest time varies with temperature, variety and growing conditions; cold soil slows growth. Rutgers’ New Jersey guide gives 60–80 days to harvest, depending on temperatures. Treat that as a regional estimate, not a fixed schedule for every winter garden. Baby leaves can be picked earlier than full heads, and harvesting loose leaves as they are ready is often more practical when winter growth is slow.
