Butternut is a winter squash with several straightforward uses: roast it in cubes, mash it after cooking, or puree it for recipes that call for pumpkin. The USDA recommends keeping whole squash unwashed until you are ready to prepare it, then storing it in a loosely tied plastic bag in the refrigerator.
How do you cook butternut squash?
Choose the method that suits the dish. Cubes can be roasted as a side, cooked squash can be mashed, and cooked flesh can be pureed. The USDA also suggests that butternut puree can replace pureed or canned pumpkin in many baked recipes; results may vary by recipe.
Roast it in cubes
Peel and seed the squash, cut it into cubes, and roast the cubes as a side dish. The USDA fact sheet recommends this preparation but does not provide a universal oven temperature or roasting time.
Simmer and puree it
For a soup, the USDA recipe cuts peeled, seeded squash into two-inch cubes and simmers them with the other ingredients until tender, then blends the mixture. Its stated 35–45 minutes applies to that specific recipe and cut size, not to every pot or squash.

Mash cooked squash
Cook the squash until tender, then mash it for a simple side. Cooking time depends on the preparation and method; the USDA fact sheet does not give a single timing for mashed squash.
How do you peel butternut squash?

If the skin is difficult to handle, microwave the whole squash for one to two minutes to soften it, as described in a USDA preparation recipe.

Set the squash on a stable cutting surface. Peel it with a vegetable peeler or small knife.

Cut the squash open and remove the seeds, then cut the flesh as your recipe requires.

Use care with the knife, especially if the squash rolls or shifts; stabilizing it before cutting makes the task easier to manage.
How should you store butternut squash?
For whole squash, USDA’s January 2021 fact sheet says not to wash it until you are ready to eat it and to keep it in the refrigerator in a loosely tied plastic bag. The guidance does not specify a storage duration. A separate USDA produce-storage list for dry storage at 60–70°F does not include butternut squash, so it does not establish room-temperature storage guidance for this squash.

Store cooked leftovers safely
For cooked squash and other perishable leftovers, USDA FSIS gives general food-safety advice: refrigerate within two hours, or within one hour when the temperature is above 90°F; keep the refrigerator at or below 40°F; and use most cooked leftovers within three to four days. These are general leftover guidelines, not a squash-specific storage study.

What does the USDA say about butternut squash nutrition?
The USDA Food and Nutrition Service classifies butternut squash in the vegetable group: one cup of raw squash counts as one cup from that group. Its fact sheet calls butternut squash an important source of vitamin A and the antioxidant lutein, but gives no amounts. It does not provide a complete nutrient profile, so those descriptions should not be read as quantified nutrition claims.
