The best knife set is the one whose knives fit the food you prepare, feel comfortable in your hand, and have a storage and care plan you will actually use. For many home cooks, a chef’s knife, bread knife, and paring knife cover the essentials. A large block can be worthwhile when its extra knives and maintenance tools match your cooking; a high piece count alone does not make it a better buy.
Which knives matter most?
Start with the jobs you do most, rather than the number printed on a box. Good Housekeeping’s Kitchen & Cooking Lab says many cooks can get by with three knives: a chef’s knife, a bread knife, and a paring knife. Its 2026 knife-set guide also values sets for versatility, value, and built-in storage.
- Chef’s knife: The general-purpose workhorse for chopping, slicing, and most everyday prep.
- Bread knife: Its serrated edge cuts through crust without crushing a soft interior.
- Paring knife: A small blade for delicate tasks and close control.
- Utility knife: A middle-size option between a chef’s knife and paring knife, according to ZWILLING’s knife-set guide.
Consider a Santoku, carving knife, or fillet knife only if you have recurring tasks for it. Good Housekeeping Kitchen Lab Director Nicole Papantoniou puts the case for a backup workhorse and less-used specialty blades this way: “In addition to the basics, it’s even better if the set includes a second, slightly smaller chef’s knife or a Santoku knife, so you have another workhorse when your main knife is dirty or in use by someone else. I also really like when the set has a good carving knife and a fillet knife. While you may reach for them less often, they come in handy when you’re in a pinch.”

Judge the knives and the everyday experience, not just the bundle. Compare these factors across the exact models you are considering:

- Cutting performance and edge retention: Look for assessments that involve actual food preparation and check sharpness after use, rather than relying on a blade’s appearance or a claim on the packaging.
- Grip, comfort, and balance: Handle shape, weight, and how a knife balances in your hand affect control. If possible, hold the knife before buying.
- Useful configuration: Count the knives you expect to use. A set with several specialty blades or steak knives may suit one kitchen and be wasted space in another.
- Storage: A block keeps knives together but uses counter space. Check its footprint and whether another storage method better suits your kitchen.
- Care and maintenance: Confirm the model’s cleaning instructions and whether it includes a honing tool or sharpener. Included tools differ by set.
- Price and support: Compare the total price with the pieces you will use, and check the model’s warranty and any sharpening service directly with the seller or manufacturer.
Testing methods can help make comparisons more meaningful. Which?’s knife-set testing information says it assesses sharpness through food-preparation tasks, checks sharpness after cutting, and asks a panel to rate comfort. The page was checked in June 2026; its underlying tests were dated April 2023. TechGearLab describes side-by-side comparisons and technical checks of hardness, sharpness, and blade angle in its knife-set review, updated March 20, 2025. These methods describe how those publishers assess knives; their recommendations are not universal rankings.
Do you need a block set?
A complete set can be a practical way to get coordinated knives and storage at once, especially if you need several blade types. But a smaller selection may be a better fit when you mainly use a chef’s knife and a couple of supporting knives, or have limited counter space. Check whether the block has room for the knives you own and whether its contents justify the space it occupies.

Piece counts can be misleading. For example, Good Housekeeping’s 2026 guide names the Wüsthof Classic 9-Piece its best overall and the Ninja Foodi NeverDull Premium 17-Piece its best value. The Ninja’s count includes eight steak knives and a block with a sharpener; the Wüsthof set includes a honing steel, shears, and a block. These are that publisher’s picks, not a guarantee that either set is the right match for every kitchen. Product configurations and availability can change, so verify the exact listing before buying.
What do example sets include?
These examples show why it is useful to inspect the contents rather than compare only the set name or piece count. They are not a universal ranking.

Check the care instructions for the exact model before cleaning it. Dishwasher suitability is not universal: Which?’s listings identify several sets as not dishwasher safe, so do not assume a kitchen knife can go in the dishwasher.

A honing steel may help maintain an edge between sharpening sessions, but it is not a permanent substitute for sharpening. TechGearLab notes that a sharpener will eventually be needed. Check what maintenance tool is included and plan how you will keep the knives sharp over time.

Does German-style or Japanese-style mean better?
Origin labels alone do not establish a quality winner. Compare the specific knives’ performance, comfort, construction, included pieces, care needs, and price. The available product and testing information supports comparisons of particular sets, not a universal rule that one country or style makes the better purchase.
