Plastic cutting boards are an accepted food-preparation option, but knife use can release microplastic particles. A 2023 laboratory study measured particle shedding from polyethylene and polypropylene boards and modeled possible yearly exposure. Those modeled amounts are not measurements of typical human intake, and the study did not show that normal board use causes illness. A 2025 mouse study found biological differences after exposure to food prepared on plastic versus wooden boards, but it does not establish effects in people.
What the 2023 study actually found
The Environmental Science & Technology paper “Cutting Boards: An Overlooked Source of Microplastics in Human Food?” tested different chopping styles and board materials. Under its experimental conditions:
- Polypropylene boards released more particle mass and more particles than polyethylene boards.
- Polyethylene released more particles when carrots were chopped than when chopping occurred without carrots.
- Most of the reported particles were smaller than 100 micrometres.
These results demonstrate particle release in a controlled experiment. They do not establish how much material a particular household consumes, because release depends on the board, knife, food, cutting force, frequency of use and other conditions.

The authors estimated potential yearly exposure using assumptions about board use. They did not measure the average person’s annual intake.

Because these are scenario-based calculations, they should not be presented as an observed dose or a prediction for every household.
Does that prove plastic boards are harmful?
No. The evidence establishes shedding, not a human health outcome. The 2023 paper included a preliminary 72-hour cell-culture test in which polyethylene microplastics did not reduce mouse fibroblast viability. A short cell experiment cannot determine the effects of long-term exposure in people or address every possible biological pathway.

A 2025 animal study simulated particle release and fed mice diets prepared on plastic or wooden boards. It reported differences in selected inflammatory biomarkers, gut microbiota and metabolomic measures. Mice are useful for investigating mechanisms, but those findings are not a human risk estimate and do not show that cutting boards cause disease in people.
The available evidence therefore leaves the specific long-term human risk from cutting-board particles unresolved. It is not scientifically justified to call all plastic boards unsafe, nor to claim that wood eliminates health risk.

What food-safety authorities recommend
The USDA Food Safety and Inspection Service says, “Consumers may choose either wood or a nonporous surface cutting board such as plastic, marble, glass, or pyroceramic.” Its practical advice focuses on hygiene and board condition:
- Wash after every use: scrub with hot, soapy water.
- Rinse and dry: rinse with clear water, then air-dry or pat dry with clean paper towels.
- Sanitize when appropriate: use one tablespoon of unscented liquid chlorine bleach in one gallon of water, then rinse and dry the board.
- Separate higher-risk foods: use different boards for fresh produce and bread versus raw meat, poultry and seafood to reduce cross-contamination.
- Replace worn boards: discard any board, plastic or wood, that is excessively worn or has grooves that are difficult to clean.
Should you switch to wood?
Switching is a reasonable personal choice if minimizing potential plastic shedding is a priority, but the evidence does not identify one universally safest material. Compare the options on the factors that affect your kitchen:

If your current plastic board is smooth, cleaned after use and routinely replaced when damaged, following the USDA procedure addresses the established food-safety concern: contamination. If you prefer wood to avoid adding plastic particles to food, choose and maintain it for that reason—not because current evidence proves plastic causes illness.

Practical decision checklist
- Replace boards with deep grooves, cracks or permanently stained, hard-to-clean areas.
- Keep separate boards, or clearly separate uses, for raw meat and ready-to-eat foods.
- Wash, rinse and dry after each use; sanitize when needed.
- Choose wood or plastic based on cleaning habits, durability and your preference about potential particle shedding.
- Treat annual microplastic figures as modeled research estimates, not a personal exposure measurement.
The Bottom Line
Plastic cutting boards can shed microplastics, but current studies do not establish that ordinary use harms human health. Keep any board clean, separate raw-food preparation from ready-to-eat foods, replace heavily worn boards, and switch to wood only if its care and lower-plastic preference fit your kitchen.
