Harvest a pumpkin when it has reached the mature color expected for its variety and its rind resists a fingernail. A firm, drying stem and a declining vine can support that judgment, but the calendar—and an orange color alone—cannot prove maturity. Pick before a hard freeze, then cure and store the fruit if you need it to keep.
Check maturity on the fruit, not the calendar
Pumpkins do not all ripen to orange. The mature color may be orange, white, blue, gray, striped or another color depending on the cultivar. Compare the fruit with the expected color for that variety, then test the rind.
The fingernail test
Press a fingernail against the rind. A mature pumpkin should resist scratching or puncture. If the skin is soft, scratches readily or dents under light pressure, leave the pumpkin on the vine when weather and plant health allow.

- The stem section nearest the fruit becomes dry, woody or less green.
- The vine begins to decline naturally.
- The tendril closest to the pumpkin dries.
These signs support a decision based on color and rind hardness; premature vine death by itself does not establish that the fruit is mature.

For cultivars that mature in another color, substitute the variety’s expected mature color for “orange.”

How many days do pumpkins take?
Time estimates are useful for planning, not for setting an automatic harvest date. Utah State University Extension gives roughly 45–55 days after flowering. A Guyana Ministry of Agriculture guide gives approximately 45 days after flowering or three months after sowing. The latter is a regional guide estimate, and neither figure overrides the fruit’s actual color and rind condition.

Balance ripeness with frost risk
A light frost may kill the vines without immediately injuring mature pumpkins. That can be acceptable when the fruit has passed the color and rind tests. Harvest before a hard or killing freeze, however, because frost-injured pumpkins keep poorly. Check your local forecast rather than relying on a fixed date.

If vines are still healthy, Illinois Extension advises harvesting before heavy frosts and leaving 3–4 inches of stem. This is Illinois-specific guidance, not a universal frost calendar. Minnesota Extension emphasizes allowing pumpkins to reach full maturity on the vine because they do not continue ripening after harvest.
Harvest without damaging the pumpkin
- Choose a dry period if possible, and wear gloves; pumpkin stems can have sharp prickles.
- Use a sharp knife, lopping shears or pruning shears to cut the stem. Do not twist, snap or tear the fruit from the vine.
- Leave several inches of stem attached; Illinois Extension specifies 3–4 inches.
- Lift the pumpkin from underneath. Never carry it by the stem, which can break and create an entry point for decay.
- Handle the rind gently and separate fruit that is immature, injured or heavily frosted, since those pumpkins are poor keepers.
A clean cut and an intact stem reduce handling damage while the pumpkin is being moved and stored.

Cure pumpkins that you plan to keep
Curing toughens the rind and helps heal minor surface wounds before storage. Follow the conditions you can maintain:

Keep pumpkins out of conditions that are wet, freezing or poorly ventilated. Inspect them periodically and remove any fruit that develops a soft, leaking or moldy spot so decay does not spread.

What to do when the signs disagree
The pumpkin is colored but the rind scratches
Color alone is not enough. Leave it attached if the vine and forecast permit, and retest the rind. If a hard freeze is approaching, harvest to avoid freeze injury and use the fruit promptly rather than treating it as a long-term keeper.
The vine died suddenly
Investigate possible disease, pests, heat or other stress. A dead vine is not proof that the pumpkin finished maturing; judge the fruit’s expected variety color and rind hardness.
The pumpkin is mature but frost is forecast
Cut it before a hard freeze, leaving the stem and avoiding bruises. A light frost that only kills foliage is less urgent for a mature fruit, but local temperatures and exposure determine the risk.
You need the pumpkin soon for eating or display
Harvest once the mature-color and firm-rind tests are met. Curing is most useful when you intend to store the pumpkin; fruit with damage or frost injury should be used first.
